How to cook Nigerian Coconut Jollof Rice With Step By Step cooking pictures

COCONUT JOLLOF RICE RECIPE


 A serving of coconut jollof rice with my palatable mixed beans sauce and some juicy chicken for lunch.
My Nigerian coconut jollof rice is cooked same way we cooked the Nigerian party jollof rice. The only different ingredient here is
the coconut milk for coconut flavour. The green pepper and tatashe in the chicken stock were also not in the party jollof but these are optional. The major ingredient here is the coconut milk.
Others can be replaced. 

Ingredients For Basmati Coconut Jollof Rice:

  1. 2 kilos chicken drumsticks
  2. I medium sized green pepper (optional)
  3. 1 large tatashe pepper (optional)
  4. i medium sized onion
  5. 1 teaspoon my pepper sauce
  6. 2 tablespoonfulls tomato paste
  7. 4 knorr cubes
  8. Salt to taste
  9. 2 bay leaves (optional)
  10. 3 cups coconut milk got from 2 grated coconuts and 1 sachet Emma coconut milk powder
  11. Soya oil
  12. 4  cups basmati rice. You can cook with any rice of choice
  13. Water

Washed chicken drumsticks in the pot with ingredients ready for boiling before frying. You can marinate your chicken before frying, I like to season and boil before frying
While chicken simmers, I mix my tomatoes paste with onion, pepper and water for frying in the pot

 Tomatoes tastes good now, I add the chicken stock and coconut milk

 I check for salt and seasoning before covering the lid to boil

 Washed rice is added after the coconut milk and stock boils

 I add two bay leaves at this point, you can skip the bay leaves if all you want is that coconut flavour in the rice. The bay leaves add some richness to the taste sha

This upload has taken over three hours plus another 15 hours . My plan was to share this coconut jollof rice recipe before 8 am so interested candidates can start revising for the weekend.  I don't why but every time I wait for over an hour just to upload pictures to blogger, migraines automatically come knocking on my forehead. 
We shall win by God's grace, could be the step by step cooking pictures are heavy. I'll continue to wait and pray until it's done. You can join me in prayer if you'll like to taste this coconut jollof this weekend cos if I vex, I might just cancel this one and post a recipe with fewer pics. I cannot come and go and die of banging headache because of ordinary pishures, say wetin happen?
 Rice is cooked, kidney beans and green peas are sauteed with some seasoning, onion and pepper to add colour and nutrition to the coconut rice when served.

    Hello aunty Eya,
