How to cook moi moi in baking pans

For this moi moi recipe, there are no leaves available and we can’t use cellophane bags anymore we decide to make use of these baking pans because they can fit perfectly in a big cooking pot. You may choose to place stones on the bottom of the pot or anything that will prevent the boiling water to overflow the moi moi. We didn’t have to place something in the pot because the baking pan sat beautifully on the top of the pot and far away from the water. Moi moi can be baked too but we wanted to steam using the baking pan.

TIPS

You have baking pans and want to steam moi moi with them, just follow the procedure for baking cake without oven; Place something between the water and the moi moi pan, cook, and you are done. You can use a rack. My microwave rack is what we wanted to use but it won’t fit, bigger than my biggest cooking pot and thankfully, the baking pan sat up there and didn’t drop to the bottom of the pot. It cooked normally and even cooked earlier than moi moi cooked in leaves because the baking pan is shallow and couldn’t take much-blended beans.

The recipe here is simple, not different from our other moi moi recipes. The only difference is the baking pan with water under it sitting on a stove. Cooking moi moi has become really really easy with food processors. All we do is rinse out the chaff after pulsing, blend very very smooth and cook for 45 minutes to one hour.

The stress of washing beans discouraged a lot of people from cooking Moi Moi in the past, not anymore. Even blenders can pulse while you only rinse and straightway start making the Moi Moi. For this Moi Moi recipe

INGREDIENTS TO MAKE MOI MOI USING BAKING PAN IN A COOKING POT

2 cups beans

2 cups of palm oil

1 large red onion

2 tablespoons ground fresh pepper (Scotch bonnet)

2 seasoning cubes

Salt to taste

Boiled eggs

Sausages

Sardine

Warm stock enough to give a light consistency. Thick beans give very hard moi moi that you won’t enjoy. If there’s no stock, use warm water.

PROCEDURE TO MAKE MOI MOI USING BAKING PAN IN A POT

  1. Wash beans, pulse, and easily remove the skin.
  2. Blend with pepper and onion to a very very smooth consistency.
  3. Add palm oil and whisk or mix well before adding a little warm water to get a light consistency (Shouldn’t be thick).
  4. Add seasoning cubes and check for taste. If salt is needed, add some salt to taste.
  5. Pour into a greased baking pan. Do not fill the pan.
  6. Place pan on a pot of water.
  7. Place the moi moi toppings you want to use. I used sausages, sardine, and hard-boiled eggs.
  8. Cover and once it starts boiling, wait for 45 minutes at least before checking. Ensure the pot doesn’t burn by checking.
  9. Moi moi cooks between 45 minutes to one hour. This cooked for less because the bak9ing pan is shallow and only a small quantity could enter. We had to cook three different times. You can tell from the different pictures.
  10. Enjoy delicious moi moi made using baking pans in a pot.
