Moi moi cooked in ceramic cups is one of the best. moi moi wrapped in leaves and ceramics give the best moi moi. This moi moi cooked in ceramic was posted on this blog a few years back and was already getting great reviews before it disappeared. It was among the blog posts accidentally deleted during blog maintenance. I think I cooked this
one better, didn't add too much to the mugs. The deleted post ehn, the moi moi rose and rose and stood like mountains waiting to erupt. They looked swollen on the tea mugs so I learnt. Here I only filled the tea cups half way, leaving space for rising moimoi. Very small quantity. 1 cup beans produced just 6 cups of moi moi. The moi moi was served with some green pepper and fish sauce, some packed in my baby's school lunch box. Very easy to cook.

Before you cook this moi moi,
Pick beans, wash and remove all the skin. A food processor made the washing very easy for me. I used black eyed pea (white beans) so, I washed quickly before soaking. If you are using brown beans, you may need to soak first before washing. After washing, I soaked beans for one hour to help my blender do the job easily
.Next, boil the eggs, cut into the number you want to use and set aside. I cut my 2 eggs into three pieces each.
With your fingers, touch a little vegetable oil and grease the tea cups, place them in a cooking pot, add water in the pot (Under the cups o) the water should stop halfway around the cups so it doesn't boil and spill into your moi moi.
Wash the red bell peppers and take out all the seeds. If you are serving with fish sauce or stew, you can make them and set aside too.

1 cup beans
1 raw egg
2 boiled eggs
2 to 3 tablespoons vegetable oil
3 large red bell peppers
1 medium sized onion
Seasoning cubes and salt to taste.

  1. Blend the beans with the peppers and onion till smooth.
  2. Add the raw egg and blend again for a few seconds or till it becomes light.
  3. Empty blended beans into a bowl, add vegetable or palm oil and mix.
  4. Add seasoning cubes and salt to taste.
  5. Mix well, pour into tea cups already placed in a cooking pot and stop when the cup is halfway full.
  6. Turn on the heat and cook for 45 minutes to 1 hour.
