Here is my vegan moi moi recipe for the vegetarian who loves Nigerian food but cannot eat moi moi as a result of some ingredients used. For people who don’t like animal protein in their food. To make vegan moi moi tasty and nutritious, we have to replace our crayfish, eggs, seasoning cubes, and fish with plant-based proteins.

The major ingredient in Nigerian moi moi is beans. Beans alone, on its own, is a source of protein. Making vegan moi moi is very easy if you can make any Nigerian moi moi. The ingredients are the same as any type of moi moi, except for the omission of animal proteins.

 

 

 

 

 

Ingredients for Vegan moi moi

Combining ingredients for vegan moi moi is simple.

  • Beans
  • Onion
  • Pepper
  • Tatashey
  • Palm oil or any cooking oil of choice
  • Salt
  • Locust beans (Optional)
  • Water

Locust beans are optional for those who don’t like its taste. I love the taste of locust beans in my beans porridge and it’s great too in moi moi. Beans don’t really need any seasoning cube to taste good. That legume has its own good taste embedded. That’s why it can be boiled with just salt and enjoyed.

When I add locust beans, I don’t blend it with the moi moi beans. It is added last or just before salting the ground beans. To add locust beans (Dadawa) to moi moi, you can add without grinding just the way I like mine or grind or pound the dadawa before adding. Adding too much dadawa can affect the color of your moi moi but not the taste.

 

Cooking Direction for Vegetarian moi moi

  1. Use the same method we use for making our Nigerian moi moi but leave out the animal proteins and use dadawa instead. Or just make your moi moi with the ingredients listed above and salt to taste. You’ll love it.
  2. After blending the beans together with onion, pepper and tatashey, add the oil and mix very well.
  3. If the ground beans is too thick, you can add some warm water and mix well, the remaining ingredients too can be added now to taste. Check that salt is okay.
  4. Wrap in leaves or pour into cans or moi moi plates and cook or bake your vegan moi moi till done.
  5. Cooks in about 45 minutes to an hour. Serve hot and enjoy.
