Today I baked delicious Nigerian meat pie with milk and eggs, no water. The kids loved it.

We already have different varieties of Nigerian meat pie recipes on this blog, I know but, this is one of the best and I can’t help but share.

 Ingredients for Nigerian meat pie with milk and eggs

  • 5 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 500 grams of butter or (2 sachets of simas baking margarine)
  • 2 eggs for the dough and another 2 eggs for sealing the pies and brushing
  • 1/2 cup of milk

 

Ingredients for the no water meat pie filling

  • 2 carrots
  • 1 small onion
  • 2 irish potatoes
  • A pinch of thyme
  • 2 tablespoons vegetable oil
  • Some liquid milk (Optional)
  • Seasoning cubes to taste
  • 1 pack of minced meat as shown in the video below

Items to keep on standby while getting  to bake This meat pie without water

  • Some Extra flour you may need while rolling and even while mixing the dough. A cup should be okay.
  • A large bowl and sieve or strainer
  • Measuring spoons
  • Measuring cups
  • Cling film or any clean cellophane bags
  • A clean kitchen slab or work table
  • Meat pie cutter. Any round cup or soup bowl will do.
  • An oven preheated
  • Baking tray
  • Aluminium foil to line the baking tray
  • A gas cooker or any stove
  • A small pot and spoon
  • Rolling pin
  • Mittens or any clean kitchen napkins to protect your hands in the oven.

Baking Steps for my Nigerian meat pie with milk and eggs

  1. Peel, wash and chop the carrots and potatoes.
  2. Stir fry with the  onion, thyme and  seasoning cubes. Leave to cook in low heat till the onion turns translucent before adding the minced meat.
  3. Stir and cover to slowly cook until meat turns brown instead of red.
  4. Check for taste and add more seasoning or salt if needed.
  5. Let the minced meat completely cook before adding some milk or water depending on how you want it but if the pot starts to dry out, add some liquid immediately.
  6. Stir and let it simmer in the milk. If your pot isn’t thick enough, you can sprinkle some baking powder in there and stir until it thickens. Your meat pie filling needs to be thick for easy sealing.
  7. Once it tastes great amd well cooked, turn off the heat and set aside.
Now we face the dough. Steps

To make the dough for this Nigerian meat pie with milk and eggs. Meat pie without water.

  • First sieve the flour and baking powder into a large bowl.
  •  Drop the butter in tiny pieces for easy mixing. With your hand, mix the flour with the butter until completely combined.
  • Next, add the eggs and if like me you don’t like to touch raw egg, you can get a spatula or spoon and mix till it begins to kind of form a dough.
  • Time to start adding the milk gradually while mixing so you don’t pour in too much. Stop once the milk is enough to help you form a smooth dough ball.
  • Divide the ball into smaller sizes, wrap in cling film and leave to rest in the fridge for about 20 minutes. But, if you don’t have that extra time, then go ahead, flatten and cut your dough.
  • After 20 minutes in the fridge, bring out the balls. Flatten and cut as I did in the video.
  • Scoop the filling onto the cut dough, brush the edges with egg, seal with a fork or use the meat pie cutter to cut and seal.
  • Bake in a preheated oven until the pies Brown.
  • Serve hot with some cold drink amd enjoy with the people who care about you.

Kids love good meat pies and they’ll give you warm hugs like my kids just did.
