Making nutritious puff puff with milk and eggs added.

The reason I quickly tried this homemade puff puff recipe with added ingredients like eggs and milk is because of the questions after I shared my best quick Sunday puff puff recipe on Social Media. Some people wanted to try the puff puff recipe and wanted a more balanced snack when it comes
to nutrition. I replied that they can try making theirs with added ingredients but wasn't sure how it's going to taste so I quickly measured out some flour and tried it first myself jut to be sure it's worth it. My plan was to be quick and then warn all those who asked not to waste their ingredients but right now, I'll encourage them to add some milk and eggs because these puff puffs are delicious and more nutritious than just plan ones. Some other comments wanted to know how to make peppered puff puff with onions. I'll post that recipe tomorrow by God's grace.
To add milk and eggs to puff puff, just add them both with other ingredients, mix very well, cover and set aside to rise. The addition of milk and eggs will not prevent the batter from rising. When you add milk and eggs, it's advisable to reduce the water quantity a bit so you don't end up with watery batter after waiting one hour to rise.

The result is awesome! I love it. Milk and eggs in puff puff means more nutritious puff puff. They started to rise as soon as the batter touched the oil and I think it's the eggs helping the yeast out. Lol. Because of the eggs added, I used just 1 cup water for 3 cups flour. These ingredients below produced 37 small and medium sized puff puffs.

Frying puff puff

Fried Nigerian puff puff with added milk and eggs

3 cups flour
2 eggs
1 tablespoon powdered cream milk
1 cup warm water
3 teaspoons yeast
1/4 teaspoon salt
4 tablespoons sugar
Vegetable Oil for deep frying 

  1. Sieve the flour, yeast, milk, salt and sugar into a bowl and mix.
  2. Add the  eggs and warm water and mix well with a wooden spoon or spatula.
  3. Cover and leave to rise for one hour.
  4. Mix , scoop with an ice cream spoon or any deep spoon or your fingers and fry in medium to hot oil. After dropping in the puff puff, if they brown too quickly, then you need to reduce to medium heat and continue frying.
  5. Flip when one side browns and take out of the hot oil when both sides are brown.
  6. Drain excess oil with paper napkins placed in a strainer.
  7. Serve hot with any drink of choice. Zobo drink will go well with this puff puff
