How to make Mayonnaise by hand

I had to make this mayonnaise by hand today without using a food processor or blender because we already have a post on the blog showing how to make mayonnaise with a blender. Making mayonnaise by hand is good workout for my hands as I started first with a small egg whisk and then graduated to a large one when the mayonnaise started to thicken and increase in size.

This mayonnaise is an experiment between making mayonnaise with egg yolk and using egg whites for mayonnaise. Honestly, egg whites gave me a better homemade mayonnaise than egg yolks. If you want to make your mayonnaise quickly without wasting the whole day whisking eggs, just go with egg whites.

 

Egg yolk versus egg white

Egg yolk showed me pepper today. If you are making homemade mayonnaise by hand, please save yourself from watery mayonnaise by using egg whites. After whisking and whisking egg yolks without expected thickening, I quickly switched. Thank God the egg whites were still waiting by the side.

As soon as we started whisking egg whites and lemons, the foaming and thickening started without delay.

At first we started whisking egg yolks for this mayonnaise, when I realise that it was taking more time than expected, we emptied the egg yolks into a blender and honestly speaking, we didn’t see that mayonnaise thickness. Thankfully my egg whites were still waiting beside. Had to quickly use the egg whites and as soon as we started to whisk, the lemon and egg mixture started to foam and for me, that quick foaming alone is an indication that we are on track,

With the egg whites and lemon, in no time it began to thicken, then we added a little sugar and vinegar because I wanted that taste. As the foam increased, we began to add oil in drops like say a tablespoon full per time as whisking continues.

I won’t advise anyone making mayonnaise by hand to use egg yolks. They showed me pepper today with over whisking and nothing serious happening.

INGREDIENTS TO MAKE MAYONNAISE BY HAND

For this quantity of mayonnaise, I used the ingredients below… With just three ingredients you can make very good mayonnaise. IThe sugar and vinegar are optional but vinegar is actually needed to give that tangy original taste

  • of mayonnaise
  • 5 egg whites
  • 2 small lemons
  • 1 teaspoon sugar
  • 1/2 teaspoon white vinegar for that little acidic taste of mayonnaise
  • Soya oil. The quantity used here is over a cup because we just continued adding until I got my preferred mayonnaise thickness.

The more oil we added, the thicker the mayonnaise got and that’s how all the foam disappeared and we have our thick mayonnaise.

 

How to make homemade mayonnaise by hand without a food blender

To make mayonnaise by hand, you need an egg whisk and a bowl for mixing the ingredients.

  1. First add the egg whites and lemon juice into a bowl without lemon seeds or particles.
  2. Next, whisk until it begins to foam and continue whisking until all the liquid turns to foam.
  3. Begin to drop in oil in small quantities as you continue mixing. After dropping oil, whisk until it mixes well before adding any more oil.
  4. Add your sweetener if you want, add vinegar too and whisk some more. I like the taste of little sugar and vinegar in mayonnaise. Feel free to add a little salt if you want.
  5. From this moment until you get your desired thickness, all you do is add oil and keep whisking as you see it thicken and increase in size, you’ll just be so excited you just want to continue whisking.

When I told my kids that I wanted to make mayonnaise by hand, that the process will be manual, they looked at me and laughed, then the second girl asked  “Mummy, who doesn’t have a blender in their kitchen? Why do you like excess work?”

Well, it might not be useful because all modern kitchens have blenders but what of that day when you need to whip up some mayonnaise for home use and the blender malfunctions?

My mayonnaise is so good I’m converting at once into delicious Nigerian salad cream for home use. So, this is how to make mayo manually without the use of any food processing machines.
