How to make fried fish stew

My method for how to make fried fish stew is very easy and fun.

We Cook this the exact sa

me way like other Nigerian tomato stew recipes. Blending the tomatoes with peppers and onion. Boiling, frying in oil and enjoying. With fried fish stew. The fish isn’t part of the cooking until stew is done. Fried fish only comes into the pot when you are satisfied that stew is almost cooked or cooked.

One thing I love about this recipe is that when the fried fish is added to the end and left to simmer. That tomato stew taste that simmers into the fried fish is very tasty. Can make you snack on the stewed fried fish and empty the pot before boiled rice is ready.

 COOKING DIRECTION

  1. Blend the tomatoes with onion and peppers, you can add just a tiny clove of garlic and ginger. Another great method is to just boil the tomatoes alone till soft. Then blend with the other ingredients (That saves time). If you use this stew method, then skip 2 and 3 below and go straight to frying.
  2. oil till water separates from tomato paste.
  3. Drain out the water with cheesecloth or a very fine strainer. You can let it boil down if you have the time.
  4. Fry in hot oil with seasoning cubes and add your fish, beef, or chicken stock. Any stock is fine. Check for taste and adjust by adding salt if needed.
  5. Finally, gently drop in the fried fish one at a time into the pot of cooked stew.
  6. Reduce heat to low, cover the pot, and leave to simmer for about 5 minutes or less. While it simmers the stew gets to simmer right into the fried fish and improve its taste tremendously. Check that heat is low enough not to burn the pot.
  7. Serve with hot boiled rice, plantain, yam, bread or boiled beans.
