Recipe: How To Make Nigerian Chicken Pie

Today we learn how to bake Nigerian chicken pie

Nigerian chicken pie is made the exact same way Nigerian meat pie is made, the only difference here is that chicken is used instead of beef. Very few ingredients are needed and it’s easy to make. These pies are so delicious by the time I entered the room and came out, only one was seen lying on the foil and the girls said they just managed to leave that one for me to have a taste of my food, Lol.

Chicken pies are a complete meal that’s so filling you won’t want to chew anything else after eating, especially if they are as delicious as these ones…


INGREDIENTS FOR NIGERIAN CHICKEN PIE

  • 5 cups flour
  • 500g butter ( I used baking margarine)
  • 1 chicken breast ( I bought already cooked one with Drumsticks takeaway rice, ate my rice and used the chicken breast for this pie so I didn’t get to buy any chicken and there was no need for boiling before using. Lol)
  • 1 teaspoon salt
  • 500ml water
  • 4 large irish potatoes
  • 3 knorr seasoning cubes
  • 7 large carrots
  • 1 teaspoon thyme ( you can use more)
  • 2 eggs (used the whites for glazing)
These ingredients produced 6 large and 2 small chicken pies. Remember, homemade is the best as
you know every ingredient in there and can add or subtract to your taste.

COOKING DIRECTION:

First I washed and cleaned my carrots and potatoes, diced and boiled with some salt until soft, added seasoning cubes, checked for a taste before I poured in the shredded (already cooked) chicken breast and mashed a little so the whole pot doesn’t become mushy, my pot was very dry so I added half a glass of water while mashing.

While potatoes and carrots were boiling, I added the teaspoon salt to the flour with my baking margarine and with my fingers worked on them until the flour begins to look like little crumbs before I poured in the water, mixed and began to knead until the flour is elastic.

I then placed on a lightly floured board and cut into round shapes. The little bit mashed vegetable is then scooped with a dessert spoon into the cut dough, folded and the edges are sealed with a fork.

You can see how to do that on this meat pie post. Baked in a preheated oven, once they put in the oven, I reduced the heat and baked slowly until brown and yummy.
