Nigerian Basmati coconut rice with dried fish

UPDATED! This Nigerian basmati coconut rice with dried fish  is plain basmati coconut rice cooked without tomatoes. It is the original version of coconut rice recipes. Basmati coconut rice can be cooked with dried fish, chicken or any meats of choice but it tastes better with dried fish. Dried/ smoked mackerel is good to. I used dried catfish and dried crayfish.

It tastes good. Basmati rice cooks fast. When I cook with basmati, I add very little water or stock to prevent the rice getting over cooked.

I like to blend coconuts and use but can also make use of coconut milk powder (store-bought), when there are no coconuts to blend. This basmati coconut rice is cooked with store-bought coconut milk powder. It’s delicious.

When we posted the beach coconut rice recipe on this blog, it was a hit for a  very long time. Right now, many still use that coconut rice recipe and the taste has never changed. Then we shared the recipe of how to cook coconut rice with tomatoes and everyone really really loved it.

 

INGREDIENTS:

2 cups basmati rice

1 sachet coconut milk powder

2 large dried catfish

Fresh pepper to your taste. I used scotch bonnets.

1 medium-sized onion

1 cup Vegetable oil

1/2 cup ground crayfish

Seasoning cubes to taste

Salt to taste

Stock or water. I used both chicken stock and water

 BEFORE YOU COOK THIS BASMATI COCONUT RICE… GET THE INGREDIENTS READY…

Blend the coconut and squeeze out the milk if you are using coconuts. If like me you cooking with store-bought coconut milk powder, empty contents into a bowl and add water to make a light paste.

Scrub the fish with salt to remove dirt and sand probably, de-bone, wash and set aside.

Roughly grind the crayfish and set aside.

Chop peppers with or without the seeds depending on your preference. I added the pepper seeds.

COOKING DIRECTION:

  1. Stir fry the onion and crayfish in hot oil till fragrant.
  2. Add the coconut milk, stir, leave to cook for about 1 minute.
  3. Add the stock, pepper, seasoning cube (Bouillon)  and fish, check for salt and leave to boil before adding the washed basmati rice.
  4. If stock doesn’t cover the rice, add water to the level of the rice or a little bit above it. Check for salt again. Cover to boil before reducing the heat to allow rice cook without burning too quickly.
  5. When pot is drying, check for doneness and if rice still needs time to cook, add water or stock, check for salt and leave to cook till rice is as crooked as you like your rice.
  6. Serve hot and enjoy. Nigerian Basmati coconut rice is easy to cook. This is an easy recipe that anyone can try.
