NIGERIAN CONCOCTION RICE (LOW COST RECIPES). How to make concoction rice in NigeriaThis yummy pot of  Nigerian yellow concoction rice cooked with palm oil and proteins, without tomatoes is very tasty and filling. IUt is called MTN rice in some places because of it’s yellow colour. With just 8 ingredients, your delicious rice is cooked.

Great when you crave rice on a tight budget. Some call it MTN rice because of the bright yellow colour. It can be cooked very peppery with assorted fresh peppers or just moderately spicy. The more the proteins used the better it tastes.

With just ground crayfish or dried prawns alone, this delicacy can be cooked and served with pride. This is another way
of cooking low cost jollof rice now that tomatoes is so expensive, Lol.

 

INGREDIENTS:

3 cups rice
1 medium sized red onion
One cup palm oil
1/4 cup ground fresh peppers
1 large sized fish. I used titus (Mackerel)
Salt to taste
2 seasoning cubes
Water
 

COOKING DIRECTION FOR NIGERIAN CONCOCTION RICE:

1. Stir fry diced onion, fish, pepper and one seasoning cube in palm oil. TURN DOWN HEAT AND LET SIMMER FOR ABOUT 10 MINUTES.
2. Add water and rice, let water cover the rice completely. Ad the last seasoning cube, check for salt and adjust accordingly. Cover and bring to boil and once pot starts boiling, turn down heat and leave covered to simmer and cook slowly in low heat.
3. If water begins to dry up before rice softens, you can add more water, check for salt and continue cooking till rice is soft.
4. Remove from heat and serve.
5. Enjoy!
