Making Nigerian coconut rice and beans. An Original Recipe By Eya Ayambem.  My Nigerian coconut rice and beans are the recipe to try this weekend. So delicious I don’t know how to describe it.

So low cost yet so nutritious and tasty.  If you like rice, if you like beans porridge, if you like jollof rice, you’ll definitely love this meal. Just finished cooking yet pot is cleared already as I type. 

INGREDIENTS FOR NIGERIAN COCONUT RICE AND BEANS


2 Cups rice
11/2 cup beans
1 large onion
1/2 cups vegetable oil
1 small can tomato paste
A large smoked fish
1 cup roughly ground crayfish
2 Seasoning cubes
1 teaspoon pepper or to your taste
2 cups coconut milk (1 sachet coconut milk powder)
Water enough to cover the rice 

Direction to make Nigerian coconut rice and beans.

COOKING DIRECTION

  1. Wash and boil beans with half of the onion. When beans is soft, add salt to taste, not too much.
  2. That’s all.
  3. In a separate pot, stir-fry the remaining onion with the tomato paste, add the pepper and seasoning cubes, allow to fry for 1 minute or more. Add the washed smoked fish and stir, cover to cook for another 1 minute. Add the coconut milk and leave to cook for yet another minute or more. If it’s the sachet powder milk, mix with a little water before adding. I used sachet milk powder.
  4. Add crayfish to the coconut milk
  5. Add washed rice and more water to cover the rice. Check for salt and cover. Reduce the heat let it simmer until rice is almost soft. By this time the beans are soft too.
  6. Mash the soft beans a little and add to the “about to cook” rice
  7. Stir and mix very well, check for taste/salt again. 
  8. Cover and let it burn just a little so the lovely coconut flavour will release itself into your pot of coconut rice and beans. Serve and enjoy hot!

Cooking steps 

  • Stir-fry the ingredients with fish while beans cooks in a separate pot

 

  • Add coconut milk to stir-fried tomatoes

 

  • Then the ground crayfish

 

  • Add the rice and more water to cover it

 

  • Pour in already soft beans to about to cook rice

 

  • Stir, mix very well and cover, let the pot simmer until rice is soft too then wait a bit let the pot burn just a little before removing from heat.
