Fresh tomatoes, crushed tomatoes, tomato paste and tomato ketchup. Oregano is another major ingredient in spaghetti sauce. The combination of oregano and tomatoes brings out that unique spaghetti sauce flavour that you taste only in 7 star hotels. Spaghetti tastes good with Nigerian tomato stew but tastes better with spaghetti sauce.

Peppers too are a major major ingredient. If you can get the peppers in different colours, great! Green bell peppers especially. Add them.

With tomatoes, oregano and green peppers present in the sauce, we made sure our seasoning cubes are added too plus Nigerian chicken stock and chicken. In Nigeria, when we cook sauces, soups and stews, we add the meat and stock to cooking. They all complete the cooking together in one pot.

This is a large pot of spaghetti sauce that serves eight. Below are the ingredients in the our spaghetti sauce Nigeria.

INGREDIENTS IN SPAGHETTI SAUCE

Fresh tomatoes that gave us about 6 cups after blending

1 tablespoon Tomato paste

2 tablespoons Tomato ketchup

Onion

3 large Green peppers

A handful Scotch bonnet (Ata rodo). Feel free to add as much or less pepper as you can tolerate.

1 teaspoon Dried thyme

2 teaspoons Oregano

Salt to taste

2 seasoning cubes

Vegetable oil

INGREDIENTS IN THE CHICKEN STOCK

1 live Chicken

A medium sized onion

1 teaspoon ground ginger

A pinch of chopped garlic

Thyme

Salt

2 Chicken seasoning cube

BEFORE YOU COOK ;

Get the chicken stock ready by parboiling washed chicken pieces with onion, salt, garlic, ginger, seasoning cube and some water to make stock. Cook till meat is tender and set aside till later.

Next blend the fresh tomatoes together with chopped onion. Boil till foam bursts into boils, wait for it to boil for about 5 minutes more, then using a fine sieve, gently drain the water off the tomatoes without draining out the tomatoes. Use a very fine sieve and do not shake when pouring in the tomatoes. Allow the water to drain out slowly.

After that, mix the tit with the tomato paste and set aside.

Finally in the preparation stage; dice the onion and peppers without the seed. Set aside too.

How to make spaghetti sauce in Nigeria.

COOKING DIRECTION FOR SPAGHETTI SAUCE MAKING

 

  1. We Fried the green peppers, scotch bonnet, onion with seasoning cubes till fragrant.
  2. Thyme and oregano came in next. Stir and move to the next step.
  1. After adding thyme and oregano, we added tomato ketchup and stirred well. Tomato ketchup cooked in the pot for about a minute.
  1. Next we added the blended and boiled tomatoes, covered without stirring for about 2 minutes. Then stirred and checked for taste. Let the tomatoes cook well in oil until taste and flavour changes. We let it cook while stirring occasionally for about five minutes. Checked for salt and added before the next addition.
  2. Furthermore, the cooked chicken and stock were added. Left to simmer with the tomatoes for about a minute.
  3. We made sure to check and stir gently. Satisfied with the taste. we turned off the heat and served this delicious spaghetti sauce with Boiled spaghetti.

 

That’s my easy recipe for spaghetti sauce Nigeria. Hope you try it and enjoy something different from status qua tomatoes stew every Sunday. One good thing about this spaghetti sauce is that it can be served with boiled rice too.
