BAKING AND DECORATING MY FIRST BIRTHDAY CAKE EVER:
No one in my family is celebrating their birthday today. The balloons were lying down there doing nothing in the drawers so I put them to good use, lol. Well, after enjoying this cake, I just received Good News; my kids have asked that I start baking SOME OF their birthday cakes. And, to think that I never thought they’d rate my homemade birthday cakes this high. 


They all like the texture and are now telling us that the ones we order always come like sponge cake and they want something like the texture and taste of my pound cake, hehehe. Honestly, they are the ones who always requested those fluffy yummy sponge cakes each time we did order birthday cakes

Today the story is different because mummy agreed to decorate. Trust kids to forget easily. I’m feeling so good with
myself right now and just let them eat the icing too. 

I can bake ‘naked’ cakes, like the easy pound cake posted on the blog, the… Never gave thought to cake decoration because the ordered cakes were great in taste and texture too but I frown at my kids eating all that fondant and icing.

 

Why I don’t let my kids eat birthday cake fondant

When we get cakes for their birthdays, it’s talk between mummy and the kids. I make sure some of the fondants is taken off before cutting at home and they hate that.

They are more interested in that sugar than the cake itself and that leaves me very worried, trying to make them drink more and more water to help with the sugar overload.

I end up disposing of some fondant or buttercream, and to them, it’s like wasting great treasure.

This is my first time ever decorating a cake and I think that I can do better if I put my mind to it. I baked this delicious Madeira cake for them because I’m impressed with their results and they pleaded that if truly this cake is meant for them, I should do it their way and not mine.

So, I had to go all the way in making them happy. They are so happy right now as I type, still munching and licking their fingers. I can’t eat all that sugar but from the way they describe and ooohhh and laaaa and lick fingers, I know it’s yummy.

It’s not as difficult as I thought sha. My next should look better. I’ll try my hands on royal icing and maybe fondant too.
Being able to bake a birthday cake sometimes can save some money.

HOMEMADE BIRTHDAY CAKE RECIPE:

INGREDIENTS:
For the ingredients and cake baking procedure, I used the cake recipe already shared on the blog.
4 cups all-purpose flour
2 cups of sugar
500 g butter or 2 sachets Naija baking margarine
8 medium-sized eggs
1/4 teaspoon each of banana, strawberry, and vanilla essences.

DIRECTION FOR BIRTHDAY CAKE BAKING:

1. Place the above ingredients in a bowl, with your electric beaters, mix for one minute, scrape the sides of the bowl, mix again for two minutes.
2. Empty into a greased pan and bake in a preheated oven for 45 minutes or till a skewer inserted in the middle comes out clean.
3. Remove from oven and leave for ten minutes before removing from pan.
4. Place on a rack to cool completely before decorating your easy birthday cake.

DIRECTION FOR BIRTHDAY CAKE DECORATING:

For this easy peasy cake, we used buttercream frosting that’s so easy to make. Even if this is your first time baking, you should be able to whip up this frosting and decorate.

INGREDIENTS FOR BUTTERCREAM FROSTING:

If you are going to decorate a two-tier cake, then multiply these frosting ingredients by 3 and so on.
2 cups icing sugar
250 grams butter or 1 sachet Naija baking margarine.
2 tablespoons milk
1 teaspoon vanilla essence
Food Colouring. I Mixed blue and Red colors to achieve this..

METHOD:

Cream your butter in a bowl until light.
2. Start pouring in the sugar and mixing until icing sugar is exhausted.
3. Add the milk, vanilla essence, and mix till light and creamy.
4. Divide into two and add food coloring to get 2 different shades.
5. Decorate your cake starting from the top. After covering the whole cake with frosting, Put the second batch of frosting in a piping bag and squeeze out designs to your taste. I wanted to sprinkle some skittles for more fun but couldn’t find any so I made do with the Mentos we have at home. Small-sized balloons are tied to skewers, pinned on the cake, and yes the simple birthday cake is here.
Added the balloons for more color and that feeling of celebration. Our Easy, Delicious Simple Birthday Cake is ready for cutting and munching.
