How to make peppered mackerel fish sauce

This delicious peppered mackerel fish sauce was just a trial that turned out one of the best recipes I created in my kitchen. With everyone hungry and there is no stew to save the day, I had to start thinking of what to do with my mackerel fish, the onion, pepper, and oil at home.

Initially, I thought about frying the fish but considering my weight loss journey, I just knew that I needed to create a recipe that would not only taste good but also help our nutrition. That was how this peppered mackerel fish sauce was birthed right in my kitchen and it saved the day.

This peppered mackerel sauce is cooked with mackerel also known as Titus, also known as Scuba in Nigerian. Peppered fish sauce is easy to cook. Just make sure it is spicy with lots of red pepper but not hotter than your tongue can tolerate. The reason I cooked this sauce without the pepper seeds is to add that fresh pepper flavour to the fish without the extra hotness.

 

USE LITTLE PEPPER WHEN COOKING MACKEREL FISH SAUCE FOR KIDS

When I cook this peppered mackerel fish sauce for adults, I include the scotch bonnet seeds. Adults love it very hot, served with some boiled rice, boiled spaghetti, or fish sauce with macaroni. It’s very tasty and filling. There is no special cooking technique needed, If you can stir fry vegetables, then you can cook this peppered fish sauce with ease.

The washed fish comes in last. Add the fish after the onion, peppers, and tomatoes have been fried in hot oil. After adding the fish to the sauce, no stirring is needed. Fish is tender and stirring can crush the fish in the pot.  Check for salt and general taste of your peppered fish sauce and adjust by adding a bit more salt if you like.

 INGREDIENTS FOR MACKEREL SAUCE:

Only six ingredients needed to make this very delicious peppered fish sauce.

1kg fish

2 cups diced tomatoes

2 cups diced pepper skin (without the seeds). If you love very peppery sauce, then feel free to add the seeds for more spice.

Vegetable oil

Seasoning cubes to taste

Salt to taste

PEPPERED FISH SAUCE COOKING PROCEDURE:

  1. First, stirfry the onion with pepper and tomatoes and seasoning cube till fragrant.
  2. Next, you add the fish and cover to cook for about 3 minutes. Fish cooks easily and with the lid of the pot on there, there is no need for flipping. Fish will cook through if you give it enough time to boil.
  3. After three minutes, cook on low heat and let it simmer for about two more minutes or till you are satisfied.
  4. Feel free to take out a small piece and check. There is enough juice in the tomatoes to cook the fish. However, you can add a little bit of water if you want.
  5. Serve with boiled pasta or boiled rice and enjoy.
