TOMATO SAUSAGE SPAGHETTI


Tomato sausage spaghetti is one of my favourite fast foods that comes when I want to cook in just 20 minutes and leave the kitchen. It gave me the name of best spaghetti shef by my kids. This has never had a leftover in my kitchen as it is cleared as soon as it's cooked. With a few ingredients added, spaghetti is cooked in
this sizzling tomato sausage sauce and served hot. When I need to cook spaghetti inside the stock like jollof, I most times prefer Golden Penny Pasta because it doesn't stick together, doesn't thicken with starch while boiling, the boiling water remains very clear until pasta is cooked, so I like to use it when itF has to cook together in one pot. Some brands of pasta get mushy if you try to cook them in one pot so be careful with your choice of pasta and if you know other good brands of pasta for jollof kind of cooking, please share with us.

BEFORE YOU COOK THIS TOMATO SAUSAGE SPAGHETTI...


First boil the pasta with a little salt for 10 minutes, drain and set aside
Wash and chop vegetables and set aside cause this one pot spaghetti cooks really fast and you don't want to overcook any ingredients while getting another one ready.

INGREDIENTS:
1 pack spaghetti
1/2 cup vegetable oil
1 medium sized onion
1 teaspoon chopped garlic
1 large tomato
1 green bell pepper
3 red scotch bonnets (Ata rodo pepper)
1 teaspoon dried thyme
1 cup tomato ketchup
1 tablespoon mayonnaise
2 cups stock (I used chicken stock)
5 small sausages ( Chicken Franks)
2 large sausages (Frankfurter)
2 seasoning cubes

COOKING METHOD:

 1. Briefly fry the onion, garlic, green pepper and seasoning in hot oil for about 30 seconds.


 2. Add the thyme and let it fry for another half a minute.


 3. Add the tomatoes and stir, let it also fry for one minute or more if you like.


 4. Add the tomato ketchup and stir.


 5. Add the mayo and mix well.

 6. Let the tomato sauce cook for about 2 minutes before you add the sausages.


 6. You can chop sausages into any shape and size of choice before adding. Stir.


 7. Add the stock and bring to a  boil, check for taste and salt before adding the pasta.


 7. Add cooked pasta after stock boils and stir well to mix.


 8. Leave to simmer for a minute or less, check for taste and turn off the heat.
 9. Serve your tomato sausage pasta hot.
