Honey cake.

This is my honey cake recipe, there is NO sugar in this recipe. I

baked this cake because my boy loves to snack on cakes, when you see him opening the fridge, he's looking for something sweet to put in his mouth and I thought of how to reduce the sugar intake... that's how this cake came about. It's delicious. Both kids and adults enjoy this cake. Easy easy to bake and healthier. it is not like the honey cakes where we combine both, no.  There are many cake recipes on the blog already but I promise you'll love this too. This recipe uses strictly honey. The honey and butter (I used baking margarine) are beaten to a beautiful mix , before adding eggs, vanilla. Milk and flour come in last. It bakes in 15 to 20 minutes. The batter turns out so lovely, you'll like it. The end product is both delicious and beautiful. The cake is airy.

1/3 Cup butter
1 cup honey
2 eggs
1/2 teaspoon vanilla essence
3/4 cups milk
2 and 1/2 cups all pourpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

1. Beat the butter and honey in a bowl with electric beaters for about 5 minutes. 

2. Add the eggs and beat till mixed

Add the vanilla flavour and beat again briefly

In a separate bowl, mix the flour, salt and baking powder together before adding to be beaten.
3.Now  Add the flour alternating between flour and milk. Add flour in 3 parts and milk in two parts, I mean, start with flour and end with flour.  Add some flour and beat till mixed.

 Then, add half of the milk and beat till mixed. 

Add some more flour and beat till mixed, add the last milk and beat then, add the last part of flour and beat till everything is well incorporated but do not over beat. 

Once they are mixed, stop beating and pour in your greased baking pan.

4. Bake in a preheated oven for about 15 to 20 minutes or till a skewer (Toothpick) Goes in and comes out clean.
Leave to cool in a rack.
