My Basic Cupcake Recipe

My rich basic cupcakes.

Recipe teaches how to make very rich traditional cupcakes from scratch, with ease. You do not need any experience with baking to make these deliciousness.The cupcakes are really good to taste, they do not need so much. Just six ingredients and your cupcakes are ready and delicious. My kids love them so much so that as soon as they are placed on the rack to cool, they start disappearing and before they are cool enough, the wire rack is empty. This quantity ingredients produced 24 delicious, spongy cupcakes. Ok, so, I baked these batch last night to use this morning and as early as now, there is no single cupcake left. I'll have to bake again before it's time for their picnic. If your kids are done with exams for the term and home, these are good holiday company. Christmas is around the corner, they'll love these cupcakes and with this easy recipe, they can do it with you. I added no flavours this time but you can mix with different flavours; Vanilla, banana, pineapple, almond, butterscotch or any flavour of choice. How to bake Nigerian cake:

This no stress pound cake recipe is especially for the learner who thinks that baking is difficult. This recipe doesn't ask that you mix anything separately before adding. All you have to do is measure and pour in a large bowl. Preparation takes less than 10  minutes and your cake is put in the oven. All you need is a stand mixer because the weight is going to be much for manual mixing.

4 cups all purpose flour (500 grams)
2 cups sugar (500 grams)
2 cups butter ( I used 2 sachets baking margarine) (500 grams)
6 large eggs
2 teaspoons vanilla essence

  1. Layer all the ingredients in a bowl, start with the flour, sugar, butter, eggs and finally vanilla.

Step by step recipe for Braided bread stuffed with stir fried minced meat

Braided bread stuffed with stir fried minced meat and vegetables.
Braided bread is made the same way my caterpillar bread is except for the braiding. If you can bake my caterpillar (Minced meat) bread, then this should be very easy to understand. For the filling, you can chose vegetables, chicken, any filling you love just let it not be watery to avoid messy braids. 

I used
  • 8 cups (1kg) flour
  • 4 teaspoons of yeast
  • 6 tablespoons of sugar
  • /2 teaspoon of salt
  • 5 eggs
  • 2 cups (500ml) warm milk
  • 3 tablespons vegetable Oil

1/4 kg of minced meat (You can blend your beef or buy minced meat from the supermarket)
3 medium sized onion bulbs
Seasoning cubes to taste
5 large Scotch bonnet pepper without the seeds
1/2  cup Vegetable oil or more for stir fry

First stir fry the onion, pepper and minced meat. Add seasoning and turn off the heat.

Simple Madeira cake recipe

 Freshly baked simple madeia cake.
Madeira cakes are an excellent start for the novice baker. Beat together liquid ingredients; sift together dry ingredients before adding to the beaten mixture. Mix everything, spoon into a baking pan and bake. Doesn't need any prior baking experience.

Ingredients For My Madeira Cake:

3 cups flour self raising ( I made my own self raising flour to use)
250g sugar ( 1 cup = 200g)
250g butter (I used one sachet Simas Baking margarine )
4 eggs at room temperature
1 tsp vanilla essence 
1 cup powder milk
baked for 20 minutes. 

Baking Procedure: 

  1. Make sure all the ingredients are at room temperature, not from the fridge.
  2. preheat oven to 180 degrees, if your oven is like mine without settings, just preheat for 10 to 15 minutes.
  3. Line or grease your baking pan
  4.  In a bowl, beat butter and sugar until light and creamy/fluffy- pale.
  5.  Add your eggs gradually beating and mixing thoroughly after each addition.
  6. Add vanilla essence.
  7.  Using a metal spoon, fold in the sifted flour and milk, your batter will be thick and creamy.
  8. Spoon into a baking pan and smooth the top.
  9. Bake for 45 minutes or till

Recipe: How To Bake Bread Nigerian Style (Less Sugar)

Nigerian style bread. 
Nigerian style bread is very soft, that bread that's soft, light and a bit elastic you can squeeze a whole loaf into the palm of your hand and it goes so well with margarine. If you like Nigerian agege bread, you'll love this. It's that soft bread that makes you eat so much without realizing. Easy to bake and great because sugar/honey is controlled by you. I added just 2 spoons of sugar to this bread made with 4 cups flour.


  • 1 Sachet yeast (7g)
  • 4 cups plain flour
  • 4 tablespoons warm water
  • 2 cups warm milk
  • 2 tablespoons margarine
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • Olive oil
  • egg and milk for glazing (brushing/egg wash)

How to bake cake using sand in a cooking pot; No Oven

 I have posted a cake baked without an oven earlier on the blog. However, that cake wasn't baked using sand. The baking pan was paced directly on the pot and I don't think I'll bake like that again. Using sand and foil actually maintains the pot and is neat too. This I experimented with a small sized cake and because it turned out so great, I'll bake much bigger cakes using these method in the future becaause my oven actually consumes more gas than baking in a pot on the burners. Even when one has an oven, baking in a pot with sand really saves gas because less is consumed.


  • 3 cups flour
  • 1 sachet baking margarine
  • 1/2 teaspoon baking powder
  • a pinch of salt
  • 1/2 cup sugar
  • 8 eggs
  • 1 teaspoon vanilla essence.

First of all I accidentally added the sugar direct to flour instead of beating it with margarine first, that scared me but the cake turned out great. Because sugar had already accidentally been added to dry flour, I had to add the eggs one after the other and beat with margarine before adding the vanilla essence. 

Baking without oven procedure:
The sifted flour which already has other dry ingredients added, now begins to get folded in with the egg/margarine mixture. After all the folding in, The taste is great and by now the pot of sand has been on the stove for about 20 minutes. Recipe: How to bake Nigerian Meat pie on a stove (without an oven)

Nigerian meat pie baked on a stove looks this way because of flipping to let the other side too cook through.

Nigerian meat pie is usually baked in an oven, but can also easily be baked on a stove top using a baking pan and cooking pot. This meat pie turned out as good as the ones I baked in an oven. What the meat pie needs to bake is just the heat whether in an oven or stove top. The process of making the batter and scooping in the meat and vegetable is the same (as shown on the step by step meat pie making pictures below)    The only thing I did differently here is heat a cooking pot with sand in it for about 40 minutes, cover with foil to prevent sand entering your food. Grease a baking pan, sprinkle flour in it, arranged the meat pies neatly and place in the heated pot. You can also cover the baking pan inside with foil (I didn't).  When the meat pie is cooked in about 40 minutes, I flip and leave for about 5 more minutes (This depends om how hot your stove/cooker is). For my cooker, I remove from heat after flipping and waiting 5 minutes. My delicious meat pie is ready.

  • Use 5 cups plain flour ( 1kg is about 8 cups)
  •  2 sachets baking margarine (500g) I don't have butter today.
  • 2 teaspoons baking powder, If you using self raising flour, then do not add baking powder
  • 1/2 a teaspoon salt
  • About 300 ml water to start with, if dough gets too soft, you can sprinkle more flour, if after exhausting this water, dough is still too hard, add some more water in small quantities while mixing.

Recipe: How To Make Nigerian Chicken Pie

Nigerian chicken pie is made the exact same way Nigerian meat pie is made, the only difference here is that chicken is used instead of beef. Very few ingredients are needed and it's easy to make. These pies are so delicious by the time I entered the room and came out, only one was seen lying on the foil and the girls said they just managed to leave that one for me to have a taste of my food, Lol.

Chicken pies are a complete meal that's so filling you won't want to chew anything else after eating, especially if they are as delicious as these ones...


  • 5 cups flour
  • 500g butter ( I used baking margarine)
  • 1 chicken breast ( I bought already cooked one with Drumsticks takeaway rice, ate my rice and used the chicken breast for this pie so I didn't get to buy any chicken and there was no need for boiling before using. Lol)
  • 1 teaspoon salt
  • 500ml water
  • 4 large irish potatoes
  • 3 knorr seasoning cubes
  • 7 large carrots
  • 1 teaspoon thyme ( you can use more)
  • 2 eggs (used the whites for glazing)

Baked whole chicken stuffed with Nigerian jollof rice, just out of the oven.

Whole chicken can be baked with or without stuffing. The stuffing makes them look fuller and more inviting and makes it a complete meal. To bake stuffed whole chicken, you can stuff with almost cooked rice, stir fried vegetables or other foods you enjoy eating with chicken. I used almost cooked very peppery Nigerian jollof rice for this stuffing and it's so good.  Preparation took just 5 minutes , baking took 1 hour 20 minutes because I like my chicken well cooked, you can bake for 1 hour 15 minutes and it will still be cooked inside. My oven doesn't have any readings so I preheated for about 15 minutes before putting chicken in. In a modern oven bake in a 190 degrees preheated oven. Will be served with the remaining well cooked jollof rice and some cole slaw.


  • 1 Whole chicken
  • Salt
  • Knorr chicken
  • Maybe I should add ketchup because my ketchup loving girls rubbed some before putting in the oven.

How To Bake Biscuits Like My 8 Year Old

 Biscuits with fillings.

 I need to learn how to bake from my girls.  Only two of the four enjoy cooking. One likes to beg others to cook for her when she's hungry, the other would rather eat cereals for lunch than cook for herself. This 8 year old is one of those kitchen loving 2. She asked for biscuits, I directed her to crackers.
Said she wanted Danish cookies and I
told her to either take my crackers or bake her cookies herself. Next thing she picked up her cookbook and entered the kitchen.
In less than 20 minutes I was called to come turn on the oven and before I said JACK, these delicious cookies were staring at me.
