How to make sugar free puff puff  with honey. Nigerian kpof kpof (Puff puff) is such a delicacy that even when we know it works against weight loss, we still are tempted by this snack. It is addictive in a way because when you meet real eaters of
puff puff ehn? they crave it the way a pregnant woman craves bland food.

There’s never a left over of puff puff or other small chops after any Nigerian event. They are rushed by adults oh, not kids.

Even athletes on weight loss journey sometimes cheat at events when they cannot resist puff puff (small chops) being beautifully served.

Puff puff is one classic street food that still sells in Nigeria and is selling into the future as it found it’s way into event menus.

Other African countries like Cameroun, Ghana and Sierra Leone also make and eat puff puff but we carry fist sha.

To make Nigerian puff puff without sugar, you need all the puff puff ingredients without granulated sugar that’s always used. Honestly, the sugar-free chin chin post inspired this.

After that post became a hit, I realised that people are actually in need of pastry recipes that exclude sugar. I am not a honey eating person, can’t take honey even in my tea but when it’s added to pastries, it tastes so good to me. I love the taste that honey adds to pastries.

So, I made chin chin without sugar, posted and realised that I need to find ways to create more sugar-free pastries. This morning, my thoughts centred around good puff puff for the full house and I told myself that this puff puff won’t have any sugar but will still taste great and that’s exactly what happened.

Out of the over 50 tiny puff puffs made about 10 minutes ago. I just turned my head now to the table and there are just about 7 puff puff balls sitting quietly on the saucer.

My happiness is that the kids love this honey puff puff and we’ll make some more before schools resume. This No sugar but tasty puff puff recipe has come in handy this holidays because of the need for small chops.

All puff puff ingredients were used here without sugar and we got the perfect puff puff.

If you know puff puff very well, you know that good kpof is supposed to be a bit oily, fluffy, airy and light. Not heavy, not dense like buns, not thick inside.

This puff puff here is that perfect type that you can squeeze with your palm into a small tiny little ball. It’s kind of rubbery when you try to cut with your fingers… That’s kpoff kpoff. 


When you add honey to puff puff, it’s not like the way sugar is added. Sugar gets into the flour before water. Water comes in last for normal recipe that we posted but not when you use honey. Honey shouldn’t be added before the warm water.

Honey is the last ingredient that is added after water, that way, you don’t create lumps in your batter.

Puff puff batter shouldn’t be runny from the beginning because, after setting and rising, the yeast woks on it and it gets softer and watery if it wasn’t thick in the beginning.

Although puff puff batter shouldn’t be watery during frying, it shouldn’t be thick either because thick batter gives buns not puff puff. It should at least look like pancake after it’s risen.

This honey puff puff has much more nutrients because here is honey nutrients added to normal puff puff nutrients. 
For this recipe, four cups of flour produced about 50 very small puff puffs and that’s much. It’s either that the batter is a bit watery of the yeast very effective or all of the above but the puff tastes really good.

Making puff puff without sugar is easy and this lovely sugar free puff puff tastes really good.


INGREDIENTS

4 cups flour
4 teaspoons yeast
1 teaspoon grated nutmeg
1 teaspoon salt
3 and 1/2 cups warm water
5 tablespoons honey.


DIRECTION  


1. Measure and sieve flour into a bowl.
Add all the other ingredients except honey and water
3. Mix and add water, then mix well with a wooden spatula or your hand. 

4. Finally, add the honey and mix well, cover with towels and leave undisturbed for about an hour or till it rises very well.

5. Deep fry in hot oil and enjoy good sugar free puff puff with a chill drink.

  1. I think what you are using in this recipe is molasses and not honey. As I have never seen honey this dark. Honey is always golden. It can range from deep brown golden to very light yellow. Molasses is always very dark brown or black.
