OKPA MOI MOI RECIPE (EASY STEPS)

Okpa with fish and vegetable stir fry
Okpa moi moi with vegetable sauce and fish for breakfast.
Okpa (Recipe below) can be eaten at anytime of day. It is made from okpa beans known as Bambara beans/nuts. There are so
many benefits of eating bambara nuts, whether boiled, cooked as okpa, or roasted. These Bambara nuts boost blood production, they are rich in Iron.They supply remedy for lack of sleep, help treat insomnia and get your body relaxed for a good night sleep. Help fight arthritis, okpa reduces the danger of stomach cancer, lowers cholesterol and even fights anaemia also known as kwashiorkor. Bambara beans are rich in antioxidant properties that help you fight quick aging, they are rich in proteins, carbohydrates and varying minerals. They are also reported to be therapeutic... Try them and see. 
Well, I don't cook with cellophane bags and do not encourage anyone to do so at all at all BUT for this particular okpa, I chose to go the nylon bag way. I wanted the exact look I see on those okpa sellers' heads around Area 1. I don't even know where to find
banana leaves in Abuja sef.
The ingredients below produced seven okpa wraps. Okpa has a natural flavour and doesn't need many ingredients. The four ingredients below are all you need to get that local okpa flavour.

RECIPE FOR OKPA MOI MOI:

INGREDIENTS:
3 cups okpa flour (Shop measuring cups and measuring spoons)
1 tablespoon ground pepper
salt to taste
2 seasoning cubes (I think I used one cube, not sure now)
Water

COOKING DIRECTION:

1. Mix the flour with a little water to form a paste.
2. Add palm oil until you get desired colour, then add the pepper salt and seasoning.
3. Mix the paste very well before adding hot water and mixing until it becomes runny (Lighter than beans moi moi else the cooked okpa will be dry and hard).
4. Check for salt and taste
5. Tie in santana bags and drop in a pot of boiling water. Let the water be much, enough to cook the okpa for one hour.
6. Serve with pap, fish, soaked garri or just enjoy with nothing.

Mixing flour paste with palm oil

Okpa paste should look like this before adding hot water.

Add hot water and continue to mix till you get this runny consistency else the cooked okpa will be dry and hard.


 Tie in bags or warm banana leaves and  drop in boiling water.
