Recipe: Caterpillar bread stuffed with minced meat sauce

Caterpillar bread stuffed with minced meat sauce.


Caterpillar bread also known as Minced Meat bread has nothing to do with real caterpillars. Just the shape. This is a must try recipe especially for lovers of Nigerian meat pie. Easy to make and requires just few ingredients,

INGREDIENTS FOR CATERPILLAR BREAD:
You can stuff with any sauce of choice, can be vegetable filling, chicken, eggs etc. 

  • 4 cups of flour
  • 2 teaspoons of yeast
  • 3 tablespoons of sugar
  • a pinch of salt
  • 2 eggs
  • 1 cup warm milk
  • vegetable Oil of choice
INGREDIENTS FOR MINCED MEAT SAUCE AND PROCEDURE (FILLING):

1/4 pack of minced meat
3 medium sized onion bulbs
Seasoning cubes to taste
3 large Scotch bonnet pepper without the seeds

First stir fry the onion, pepper and minced meat. Add seasoning and turn off the heat.

CATERPILLAR BREAD MAKING METHOD: 

  1.  Whisk the warm milk, sugar, salt and yeast together, cover and allow to stay for about 10 minutes in an airtight container. I kept mine in an oven, without fire oh.  It will rise abit and look foamy after that time
  2. Add the eggs and mix, then start adding your sifted flour gradually while mixing until you see that flour is no longer sticky on your fingers. You may need more or less flour than I used to achieve this. Keep in mind that the more you knead the dough, the softer it becomes. I kneaded until it felt like fluffy eba.  After kneading, pour some oil on the round dough in a bowl, cover and put away for like 10 minutes or more if you like.
  3. Bring out the dough and knead again. Roll out on a lightly floured surface and cut, then roll again to create an oval or rectangular shape.Cut the other end like stripes as seen in the picture below, Fill in with your sauce or whatever filling you want to use as shown below. Roll together and pinch the end of the stripes lightly so they stick immediately. Lightly brush milk or egg on those stripes to help them stick together during baking. Place on the lined oven tray as soon as you cut and roll (I lined with foil).   When everything is rolled and ready, whisk a little milk together with an egg and brush the bread before putting in the oven.
  4. Bake in a pre-heated oven (180 degrees) for 15 minutes or till bread is brown..
  5. Serve hot.
