Chicken Stew With Boiled Macaroni And A Side Of PawPaw. I cooked this meal in 25 minutes. That is
because I already had preserved tomato at home. 
For the macaroni, from when I added it to boiling water, to when I turned off the heat, 
it took 12 minutes. I still think that some types take longer to cook.
The stew cooked so fast, perhaps, it’s because of the soft chicken.
 I didn’t want it to cook or simmer for too long because, the meat will start to disintegrate 
from the bones. Hard chicken may take longer to cook.

 

Ingredients For Chicken Stew:

  • 1 kg chicken
  • 1 large smoked fish (optional)
  • fried tomato(Fried with onion, pepper and seasoning)
  • 3 cups soya oil
  • 1 medium sized onion
  • salt to taste
  • 1 tablespoon ground pepper
  • 2 seasoning cubes
  • water

Cooking Steps For This Chicken Stew

  1. Place the washed chicken in a pot and add salt and chopped 
    onion, allow to boil
  2. add some bone picked smoked cat fish and allow to boil again before
     adding the preserved tomato (I didn’t have to fry or season the tomatoes
     because I already did that before storing in the freezer.

  3. Stir, check for salt, cover and reduce the heat so that it simmers for 
    some 7 or 8 minutes ( for soft chicken) before turning off the heat.

 


How To Boil Non Sticky Macaroni

  1. Add macaroni, salt and some drops of oil to boiling water, stir, cover and allow to cook
  2. When it’s tender enough, pour in a strainer, pour some cold or lukewarm water while shaking to wash away the starch

 

I said earlier on this blog that smoked cat fish is my secret ingredient to great taste in soups and porridges.  
That the only dish I do not cook with smoked cat fish is my tomato stew. Here, I decide to go against my self and try it. Well, my little 5 year old who doesn’t like macaroni much, asked for more, cleared her plate and requested again for more.
Enjoy your chicken stew. This stew, I can serve it with boiled rice, boiled unripe plantain, boiled yam and even dodo.

  1. How do i mk my stew very red,ve bin vn issues wit dt? Besides i use ripe tomatoe nd fresh pepper wit tatashe bt stil nt as red as ur stew herem *sad*
