Coconut Rice With Smoked Fish plus Video

Today I’m sharing my simple recipe for coconut rice with smoked fish. We have a variety of coconut rice recipes on the blog already.  We posted coconut rice cooked with tomatoes, coconut rice with shrimp and others.

For today, it’s this best method to use when you cook coconut rice with smoked fish. It is absolutely delicious and not only delicious, this meal is very nutritious for the whole family.

 

INGREDIENTS FOR COCONUT RICE WITH SMOKED FISH

  • 3 cups rice
  • 2 large coconuts blended for coconut milk extraction
  • 1/2 cup ground crayfish
  • 1/2 kg goat meat
  • 1 small Onion
  • 1 small sachet goat meat seasoning
  • Seasoning cubes to taste
  • Salt to taste
  • Fresh peppers

 

BEFORE COOKING: First I shelled the coconuts using a cleaver. A hammer or rock can also be used to hit on the coconut shells and break them up. We have a method of easy making of coconut milk. You can use that method.

After removing the coconut flesh and drinking the juice, we cut the coconuts into tiny pieces and blended into a pulp.

Finally, the blended pulp is poured into a strainer to extract the milk. Watch that video here.

So, now our coconut milk is ready for making this coconut rice with smoked fish.

AGAIN BEFORE COOKING: Wash the smoked fish whole. Because of the name of this dish, you want to see the fish in there while eating so do not break and debone already. Wash with the dried sticks intact. After cooking, the fish head can be removed while savoring the delicious smoked fish coconut rice.

DIRECTION TO COOK COCONUT RICE WITH SMOKED FISH

Watch the short video as we cook or use the steps below, whichever you prefer is fine.

  1. Add the goat washed meat, chopped onion and seasoning into a pot. Cover and leave to simmer in low heat for about 15 minutes.
  2. Pour in your washed rice and the coconut milk. Like I showed in the video above, please let the milk cover the rice completely. If coconut milk isn’t enough, just add some water like I did there.
  3. We added the washed whole smoked fish, crayfish,  and chopped fresh pepper right after pouring in the coconut milk.
  4. Now check for salt and add to taste, add more seasoning cubes if you need some more. Check for the taste before putting the lid back on the pot of coconut milk rice. Leave to simmer but check frequently for softness by tasting little from the pot every time that you check.
  5. Watch the water level please, if pot begins to dry up when rice is still not soft enough, just add a little more water or milk and check again for salt. Cover and let it cook till soft.
  6. Avoid stirring to prevent the smoked fish crushing, they need to remain  whole and be served with the smoked fish coconut rice you cooked.
  7. Once rice is tender and the coconut rice aroma has filled the kitchen, let it dry and turn off the gas cooker before serving.
