MY WEIGHT LOSS JOURNEY DAY 31

 Moi moi with fish and vegetables.
This is what I used to break my fast yesterday Wednesday. The only meal of the day. 1
Nigerian moi moi, fish and vegetable stir-fry with even more vegetables. My goal is to drop below 80 kg this weekend, let's see what happens. 

RECIPE FOR THIS STIR-FRIED VEGETABLES:

 INGREDIENTS:
1/2 cup soya oil
1 medium sized red onion
1 large red bell pepper
1 large green pepper
3 scotch bonnet peppers
A handful baby runner beans
1 piece fried fish (Store bought)
1 seasoning cube
salt to taste

COOKING DIRECTION:

  1. Wash and cut the vegetables
  2. Stir-fry with seasoning (stock cube) in a pan, add the grilled or fried fish and stir until onion becomes translucent. Check for salt
  3. If it's too dry for you, add some tablespoons (Buy tablespoons on amazon) water and if you want some thick sauce, you can thicken with baking flour and serve with some moi moi, plantain, yam or Irish potatoes.
