NIGERIAN SALAD CREAM ADAPTED FROM THOUSAND ISLAND DRESSING

It just occurred to me again this morning that the reason all my kids love vegetable salads could be the dressing I use. After trying so many salad dressings, the one that clicked with my Nigerian palate is the thousand Island Dressing. When I use it on the kids' burgers, they just eat and eat. When it's used on salads, the bowl clears within minutes. Then, all of a sudden, around last year, the price of Thousand Island dressing just rose like that and aside the price skyrocketing, we couldn't find it easily like we used to. Sometimes we went round different supermarkets and see other salad dressings sitting elegantly on shelves but no Thousand Island and we till now

I'm so so excited. When I stood on the bathroom scale and saw the figures, I just smiled to myself and concluded that my goal to drop down to 80kg by weekend is realisable and very very close. The results are slow and steady but sure. I won't rush this because I'm not looking at short term weight loss. It is a lifestyle change. I want to permanently change some things about my size and live healthy. Some friends are suggesting different dieting methods to help me lose the weight faster but that's not what I want. Losing it faster and gaining all back is what I have done in the past, in 2010 precisely when I lost some 10 kg in two weeks for a major event and right after that event, the cravings won't let me sleep at night. I wanted so much to swallow something with some soup, I craved for normal Nigerian jollof rice and fried rice like wetin? Couldn't even last one week longer before nI crashed like a... DAY 22 OF MY WEIGHT LOSS JOURNEY WITH NIGERIAN FOOD

Yesterday Sunday,  March 25 marked the 22nd day of me trying to lose weight with Nigerian food. No breakfast. After all that Saturday rice, I rejected Sunday rice. Boiled yam with egg sauce was great. That picture was zoomed in, the real food plate looked really small. 3 tiny pieces of boiled yam with egg sauce.  (Looking back now, one piece of boiled yam should have been just fine) I snacked on 2 avocados and 2 mangoes and I ate just onion and lettuce salad with sardines for dinner.

Over the weekend, I went to my children's school and they noticed I'm losing weight. Commented that I look very different and that they love it 👍👍. I forgot to check my weight before rushing for church and I won't even try it after eating all that yam and egg sauce and washing down with chill zobo. Hopefully, tomorrow, I know where I stand. Kuli Kuli (groundnut cake) salad is something you all need to try. It's low cost, nutritious and tastes good. I didn't know, never heard of it before my girl asked to teach me how to make one meal from her State. When she bought kuli kuli and cabbage, I was like "Hope you don't plan on giving me a running stomach for scolding you oh?" She just laughed and I said ok, let's see how it goes. I know she was happy seeing us rush, the girls all brought out plates to take more after tasting. I loved it but couldn't eat much because it's my first time. If you know how to make cole slaw, this is similar. I just warn though that some kuli kuli can be sandy, check before buying.
