Fresh Fish stew with vegetables (Caribbean Stewed fish altered for my Nigerian palate)

Image
FRESH FISH STEW CARIBBEAN STYLE

This fish stew is so delicious one cannot describe it. If you love like Caribbean stewed fish, then, you'll love this in a finger licking way. I left out a few ingredients that I think my local Nigerian palate will not enjoy. Boiled my fish the Nigerian way before adding unlike the Carribean method of just stir frying fish  along with vegetables. These pieces are large and may not cook through the way we like it here. My boiling before adding is just to ensure that my fish cook well well and I have fish stock to make sauce because definitely, my Nigerian palate will enjoy this with a hot plate of boiled rice. The stew is meant to be served as a meal sha but since I'm not really watching my weight at the moment, that alone without boiled rice won't fill me up. So I got a little bit creative and came up with this delicious pot of Nigerian fresh fish stew cooked with colourful assorted vegetables, with my Naija local flavour in there. This pot o…

Spaghetti can be boiled and served with sauces and stews, served with just cheese, beef gravy cooked jollof or even fried like fried rice. This delicious pot was cooked with minced meat, vegetables and that Nigerian thing added by the little uziza sprinkle.
Cooked in less than 20 minutes. To truly enjoy spags, cook them al-dente. Not too soft.

Quick Cook Jollof Pasta With Beans, Corned Beef

Image
JOLLOF PASTA RECIPE
This my signature pasta, please don'tb get bored. I'm trying to like other shapes but this still tastes and feels better for me. I never enjoyed the ones with a hollow middle. This dish was so rushed that I think I shocked myself. Everyone that ate, asked for extra. We have cooked pasta a lot of times in the past but this, I mean, this particular pot turned out tasty beyond expectation. It cooked in 8 minutes but I allowed one more minute before turning off the heat.

I labelled this Nigerian coconut macaroni cos it's cooked same way we cooked coconut rice with beef except that macaroni cooked in just ten minutes and this was cooked with just crayfish and

Chicken And Mushroom Pasta By Chidinma

Thank you, Aunt Eya for letting me share this on your blog.

My name is Chidinma, and I blog at http://thefruitfulkitchen.wordpress.com My blog is all about healthier recipes for the whole family.

Today, I'd like to share with you my recipe for Chicken and Mushroom Pasta.
I'm all about easy AND tasty recipes, and this is at the top of the list. I love pasta in any shape, form or size (size ke? No, not really-figure 8 tinz).

I'm a pepper freak (I love atarodo/habanero!), but I've come to realise, after making a variety of

Fish Fillet Vegetable Sauce With Pasta

Image
This fish vegetable sauce is best cooked with fish fillet. I didn't have at home so tried to cut my croaker, a few bones escaped into the pot but couldn't create any drama because we all over enjoyed this meal.
I regret taking pics with this Lumia cos posting them has given me enough headache already. Couldn't upload to a laptop and now blogging with the phone to see if they upload but not sure they'll show on the blog. Let me just keep trying different tricks cos this tasted too good not to be posted.

Yay! the pics have finally uploaded after these long hours. Try this

Cooking Macaroni With Fish Stew And Baked Beans

Image
This macaroni came in when I needed to do emergency cooking. For normal cooking, you can add sauteed vegetables, minced meat or even cook with more fish than this cos if you cook one whole pack of macaroni with this quantity of fish, some will taste fish while others will go without.
Do not cook with too much

Spaghettini With Vegetable Chicken Sauce And Peas In Tomato Sauce

Image
A serving of spaghettini with chicken sauce and peas in tomato sauce. The reason I cook more of spaghettini than spaghetti is because this cooks in five minutes just like noodles. It saves time in the kitchen. This meal was absolutely yummy, plates were cleared and I like that.  No ingredients in the peas because the tomato sauce that came with the baked beans added enough taste to the beans.
For the chicken sauce, I made it exactly like the shredded chicken gravy, only that here I used large chicken parts, cooked the
