Fresh Fish stew with vegetables (Caribbean Stewed fish altered for my Nigerian palate)

Fresh fish stew cooked with vegetables.

This fish stew is so delicious one cannot describe it. If you love like Caribbean stewed fish, then,you'll love this in a finger licking way. I left out a few ingredients that I think my local Nigerian palate will not enjoy. Boiled my fish the Nigerian way before adding unlike the Carribean method of just stir frying fish  along with vegetables. These pieces are large and may not cook through the way we like it here. My boiling before adding is just to ensure that my fish cook well well and I have fish stock to make sauce because definitely, my Nigerian palate will enjoy this with a hot plate of boiled rice. The stew is meant to be served as a meal sha but since I'm not really watching my weight at the moment, that alone without boiled rice won't fill me up. So I got a little bit creative and came up with this delicious pot of Nigerian fresh fish stew cooked with colourful assorted vegetables, with my Naija local flavour in there. This pot of fish stew serves 7.

INGREDIENTS:
2 Scallion ( Spring onion)
1 large Red bell pepper (Tatashey)
1 large Shallot (Onion)
1 large Green pepper
1 large Yellow pepper
1 large Orange pepper
3 Scotch bonnet (Ata rodo pepper)
4 medium sized Tomato fruit
1/2 teaspoon Thyme
1/2 teaspoon Black pepper
3 cups Vegetable oil. You can use less
2 medium sized Fresh fish (Croaker)
2 Seasoning cubes
Salt to taste
3 cups Water to boil the fish. You can add more if you like to make more stock

DIRECTION:

  1. First dice and chop washed vegetables, wash and boil fish with salt and onion and set aside.
  2. Stir fry some vegetables (Onion, tomatoes, all the peppers, thyme, black pepper, in oil with seasoning and salt for about 3 minutes in medium heat so they don't burn. Check for taste. Should taste really good at this time already, with delicious aroma filling the whole kitchen.
  3. Next, gently add your already boiled fish and stock, with a wooden spoon, shift vegetables and place fish without stirring or just empty sauteed vegetables into the pot of cooked fish for easy transfer. Cover and leave to simmer for about a minute or less. Check again for taste.
  4. Add the spring onion and immediately turn off the heat, if you can do without crushing the fish, then gently stir and mix. Leave to stand for about 3 minutes, let the different tastes and flavours seep into the fish before serving as a meal or with boiled rice, spaghetti or macaroni.

How to cook spaghetti with minced meat and vegetables

 A serving of spaghetti cooked with minced meat and vegetables.
 Spaghetti can be boiled and served with sauces and stews, served with just cheese,beef gravy cooked jollof or even fried like fried rice. This delicious pot was cooked with minced meat, vegetables and that Nigerian thing added by the little uziza sprinkle.
Cooked in less than 20 minutes. To truly enjoy spags, cook them al-dente. Not too soft.

INGREDIENTS:
11/2 pack spaghetti
Minced meat (I used 1k worth, that's large pack)
3 large Tatashey (Red bell peppers)
3 small tomatoes blended together with the tatashey and some onion

1 teaspoon pepper sauce
1 large sized onion
1 seasoning cube
1/2 cup soya oil
2 cabbage leaves
2 medium sized carrots
a pinch of thyme
pinch of Rosemary.
1/2 teaspoon curry
1/2 teaspoon jollof spice
Salt to taste
I gave it that Nigerian flavour with a sprinkle of chopped uziza leaves
Water to cover the spags, you may need to add more incase pot dries before food is ready. 


Before you cook this abosolutely delicious meal, first blend the tatashey, tomatoes and half that onion, boil them till dry and set aside. Wash and chop vegetables and set aside.

Spaghetti with vegetable sauce

Spaghetti boiled with tumeric & served with vegetable sauce.

 This vegetable sauce is both delicious and nutritious.
INGREDIENTS for boiling spaghetti

  1. Water
  2. Drop of vegetable oil
  3. Salt
  4. Tumeric (Optional)

INGREDIENTS FOR PASTA VEGETABLE SAUCE:
  1. 3 cups Vegetable oil
  2. 1 small bunch green leafy vegetable (Amaranthus/Aleho/green)
  3. 2 large tomatoes
  4. 2 eggs
  5. sardines or any fish of sauce. I used 2 cans of sardines here
  6. 2 Seasoning cubes
  7. 2 medium sized Carrots
  8. 1 large Red bell pepper (Tatashe)
  9. Scotch bonnet peppers (Optional)
  10. 1 medium sized Onion

Beef onion thickener in vegetable sauce


This sauce is the best yet. I love it, my family loves it too,  however, one of my girls says she enjoyed the sauce with the knorr beef gravy thickener more. Just the normal vegetable sauce with that beef onion flavour from the thickener.
INGREDIENTS:

  • Onion
  • Cabbage
  • Carrots
  • Beef stock
  • salt
  • Knorr Beef onion thickener
  • Seasoning cubes
  • pepper
  • Green peas

Quick Cook Jollof Pasta With Beans, Corned Beef

A beautiful serving of jollof pasta looking as delicious as it tastes.
 This my signature pasta, please don'tb get bored. I'm trying to like other shapes but this still tastes and feels better for me. I never enjoyed the ones with a hollow middle. This dish was so rushed that I think I shocked myself. Everyone that ate, asked for extra. We have cooked pasta a lot of times in the past but this, I mean, this particular pot turned out tasty beyond expectation. It cooked in 8 minutes but I allowed one more minute before turning off the heat.

INGREDIENTS:

  • Pasta 2 packs
  • soya oil
  • pepper sauce
  • Seasoning cubes (4 chicken cubes)

Fish Fillet Vegetable Sauce With Pasta

This fish vegetable sauce is best cooked with fish fillet. I didn't have at home so tried to cut my croaker, a few bones escaped into the pot but couldn't create any drama because we all over enjoyed this meal.

The reason I cook more of spaghettini than spaghetti is because this cooks in five minutes just like noodles. It saves time in the kitchen. This meal was absolutely yummy, plates were cleared and I like that.  No ingredients in the peas because the tomato sauce that came with the baked beans added enough taste to the beans.

How To Cook Pasta With Chicken Wings

I enjoyed eating this pasta, so did everybody. It's my second time cooking power pasta and I think I love it. There are some kind spaghettis that do not turn out well when prepared in
jollof form but this was excellent. The texture was great. It didn't turn out like potor potor spaghetti. This meal is just awesome. 

If you are used to boiling spaghetti and eating with stew, try this. I am sure you will like it. I do not miss spaghetti, sometimes when spaghetti is served, I ask for rice. The way and manner in which I ate this one tells me that some pastas are better than others. I don't want to mention names but there is a particular type of spaghetti I have

How To Cook Spaghetti With Spicy Mutton Soup

This mutton soup can be cooked with goat meat. The taste is almost the same thing. It is very easy to cook. Macaroni can also be cooked this way. The soup can be served with
boiled rice for a change. It can be served the way we serve rice with our Nigerian tomato stew or be added to parboiled rice and cooked with more water until rice is tender. Instead of tomato stew, we can cook Nigerian jollof rice with this mutton or goat meat soup.

Chicken can also be cooked like this mutton soup. The chicken has to be hard chicken or orobo hard. Soft chicken may fall apart in the pot. Everyone  that  ate this meal had to ask if I added coconut milk. I also felt it tasted like coconut rice, I don't know why.  I didn't add anything
