Peppered Chicken/Piri Piri Chicken

This chicken piri piri looks and tasted so good. The sauce is yummy. I can serve this sauce with white rice. Tastes good and hot, good especially for those who don’t like tomato stew.
Remember Miss N? She shared your most favourable Broccoli Salad recipe, enjoy it with this
peppered chicken.

Ingredients for peppered chicken peri peri:

4 red peppers/ atarodo(pardon my spelling)
2 medium tomatoes
8 pieces of  raw soft chicken(depending on the quantity of marinade).
2 medium red onions
3 tablespoons of oil(sunflower,vegetable,groundnut)
Seasoning (Ginger, Garlic, Knorr cubes, Salt)

COOKING DIRECTION FOR Peppered Chicken Piri Piri Chicken

a) Blend 1 tomato,1 onion and 4 peppers and set aside.
b) Get a bowl pour in 3 tablespoons of oil, then put in the blended ingredients.
c) Put Seasoning and mix well. Taste to see if more seasoning is needed (Don’t be scared of pepper it is not that hot lol)
d)Pour in Chicken into mixture(now a marinade) and mix well.
e) Cut the remaining 1 tomato and 1 onion in big chunks and then pour into bowl of marinated chicken and mix.
f) Cover bowl and keep for at least 2 hour to allow chicken absorb the taste of the marinade.
g) After 2- 3 hours, preheat oven 150 C degrees.
h)Put marinade chicken into baking pan and put the marinade on each chicken piece before putting into the oven to bake.
i)Allow to bake properly for about 20 mins before serving and enjoying yummy chicken peri peri.

Note:

Chicken could be
grilled (if you want it a little bit drier than the baked version). Also, this could be done with hard chicken but it would take about an hour or so to cook properly. Finally, it could be served with any meal especially broccoli salad
My friends loved it.
Cheers!

  11. Nice one miss N,for those criticizing the plate, please help buy plates from Ikea or anywhere you please and share for all of us since na plate you come look for here. Love this and I will surely try it out but without tomatoes because I love pepper especially the 'bini' pepper, always very hot and has a particular aroma. Condensed peak milk(I mean the thick peak milk) can be mixed with little mayonaise and used to mix salad too.I'm glad to be part of the WC family.

  15. Lol@Lazy to use your oven. Please give it a try. I personally find it less stressful to use the oven rather than frying with oils, for chicken or turkey. Maybe I don't just like the oils' heat. Lol. But you'll like the oven thing sha. Just give it a shot.

  16. Miss N, GBU so much! As per tasting the pepper puree, it was as if you had a foresight of what I was thinking with your comment in bracket.

Now I can make pepper fish, pepper snail, pepper turkey and even pepper crab!

Please let's drop the presentation talk, we aren't in a cooking class. Trying doing that alongside garnishing with an hungry man waiting for his food.

  17. Congrats dear. No need to be shy. Some people who have the complete gas don't even use it. I know of a friend who told me that she's afraid of using oven even when I offered to teach her. Welcome to the club of grillin/roasting/baking!
