My Nigerian Spaghetti Bolognese By Ahdaisy Jayde

I just wanted to send this in as an Easter Special recipe.

Remember when I said
I Googled the hell out of spaghetti Bolognese? Yeah, I finally came up with a recipe that will work for the normal Nigerian. The basic ingredients for the real Bolognese sauce is a lot of meat, Tomatoes, Spices and Parmesan Cheese. I skipped the cheese and brought out all the spices I have hope that one of them will contain the 'oregano' I kept seeing in all the recipes. 

I'm sorry that there is no specific measurements or timing, I 'used eye' to measure them.


To make your ground meat yourself.

Cut the meat into cubes and put in the freezer for about 30 minutes or just enough for the sides of the meat to harden. Separate the meat cubes so that they don't freeze together.

When it is ready, put in your meat grinder (I used the one in my food processor), you can add some pepper and seasoning into the meat and continue grinding. And there you have it, your own homemade ground meat with ingredients you are sure of.

Ingredients for my Nigerian Spaghetti Bolognese-ish


3 cups Olive oil or vegetable oil
1 medium Onion
1 clove Garlic
1kg Ground beef (You need a lot but I used little cos I am cutting down on my beef intake)
3 cups Chopped Fresh tomatoes (I had blended ones so I used it like that)
1 can Tomato paste (tin tomato)
2 teaspoons Curry
1 teaspoon Thyme
1 teaspoon Nutmeg
1 Bay leaf (little)
A handful scent leaves (little)
2 cups Carrots (diced)
Beef stock (I had chicken stock so I used it like that)
2 Knorr cubes (or any other one)
1 teaspoon fresh Pepper
Salt to taste
1 pack Spaghetti

Heat oil in a saucepan
Saute onions and garlic until soft
Add ground beef and stir to brown
Add ground beef, tomatoes, spices, seasoning and stock, AND wine for those who cook with wine. Plus carrots and water


1. Heat oil in a saucepan. Saute the onions and garlic until soft and a little charred.

2. Add the ground beef and stir till continually to break it up and brown it.

Rivers State Meal, Onunu And Fish Pepper Soup By Young Awesome Mum

Onunu and fish pepper soup is a meal enjoyed mostly by the kalabari and okrika people of
Rivers state, Nigeria. It can also pass for this month's challenge since plantain is one of the ingredient :D
* Yam
* plantain
*palm oil
*seasoning cubes
 Mint leaves

 I didn't put an asterisk on the last ingredient because i had all others at home except that so didn't bother going out to get some :)

Boil your yam as usual, you can boil d yam and plantain 2geda but you'll have to let d yam boil a little before adding d plantain because the plantain doesn't need to be cooked too much because it's already soft (overripe)

 When that's done, you put d yam in a mortar and start pounding (just like you're making pounded yam). When the yam's soft you can then add the plantain and continue pounding so the plantain would mix well with the yam, when that's done add a little palm oil then pound a lil more ( like 3mins more) and your ONUNU is set to be served with pepper soup!

Ingredients for Nigerian meat pie

1.5kg of plain flour (About 12 cups)
500g of butter
100g of trex butter. It makes my pastry soft. (Optional)
1 teaspoon salt
little water to make the dough
5 medium sized carrots
2 teaspoons of thyme
2 teaspoons of atagungun( powdered chilli peper) sorry am bush
45 medium sized irish potatoes 
11/2kg minced meat you can use 2 kg if you love them extremely meaty.
any other seasoning of your taste, preferrably 2 knorr or maggi chicken cubes like me.
Bisto Gravy granules or flour(acts as a thickener). You can use flour or knorr gravy powder as thickener, they all work just fine.

Nigerian Groundnut Soup With Ugu Vegetable

Nigerian groundnut soup with warm garri.
Groundnut soup also known as peanut soup is mostly cooked by the Northerners and some parts of Southern Nigeria. If you can cook egusi soup with vegetable, then you already know how to cook this groundnut soup because same method will give you a wonderful, delicious pot of soup. It is a delicacy to those who know it. Some people cook this soup with slices of dried unripe paw paw. This unripe paw paw acts like kpomo in the soup.  
It can be made thick or light depending on how one wants it, and
the quantity of water or vegetables added. Some great lovers of groundnut cook this without vegetables. The groundnut can be roasted a little or just ground raw and fresh.  A small portion of Locust beans (dadawa) can also be added if you like it's flavor.

This is the kind of soup that can make you eat more eba than planned, so, if you are a weight watcher, I beg you to eat only one of those foo foos in the picture. Without self control, the yummy soup can make you clear all three before realizing what you just did.
This soup can be served with any type of foo foo, semo, starch, not too soft amala, pounded yam etc.
Anyone who can cook the miyan taushe soup sent in by Deborah Bala two days back, should be able to cook this soup. There is no much difference.

It is best warmed again at night or stored in a freezer because, just like melon soup, it can go sour easily.
A trial will make you a fan of this soup, I promise.

1 Cup slightly roasted groundnut
1 small bunch fluted pumpkin (Ugu vegetable)
1 kg beef
3 cow skin (Kpomo)
2 medium sized smoked catfish
1/2 cup roughly ground crayfish
1 cup periwinkle (mfi) Optional
1 seasoning cube
1 pack stock fish ears
1 teaspoon pepper, you can add more
1 tablespoon palm oil
Salt to taste
Enough water or stock to cover the meat after steaming.
