How To Cook Less Expensive Nigerian Fried Rice

my girls told me point blank that if I add peas, kidney beans, sausages or liver, they are not going to eat. They are tired of me adding too many vegetables to their fried rice. 
I promised to cook with just cabbage and carrots. That's exactly what I did and they ate like never before.

Nigerian Jollof Rice Without Vegetables

Jollof rice is always present at every foodious Nigerian event. It is one meal I never get tired of eating. Even after enjoying mine at home before leaving, I'm still very much interested in the one served at the events' reception. I don't know why but I hate missing the jollof at any event I attend.

Sometimes, I boil the rice with thyme, onion, salt and seasoning before mixing with the already prepared stew.This method varies the taste and aroma. I don't add
curry here but enough thyme and benny spice. The only reason I have Benny spice at home is because it is superb for rice. I cook my soups and other meals with seasoning cubes and cook rice with Benny spice or that monosodium glutamate they call white maggi. Many people don't eat it because they think it is bleach. If only

How To Make My Simple Fried Rice Sauce

Dear Diary,
making this quantity of sauce didn't take much time because it was Christmas, the house was full and so, there were many helping hands. It was so delicious. The plan was to cook so much so that the left over is shifted to dinner. At the end of the day, we had to eat something else for dinner because the gigantic pot of rice was cleared. I mean every single grain was eaten at lunch!


  •  1 small cabbage chopped
  • 4 lare carrots  
  • 1 medium sized green pepper
  • 1 cup green peas
  • 1/4 cup kidney beans (Optional)
  • cow liver (optional)
  • 1/2 cup sweet corn ( well, I enjoy the sauce more, when sweet corn is not added)
  • 1 large onion

My Nigerian Fried Rice Garnished With Cucumber Skin

So, I cooked this fried, hoping to get the green from the peas but after boiling them done, the green disappeared and my pot of rice looked like it's not balanced, like something is missing. Thankfully, I had some cucumbers in the fridge. Scraped only the green and gave colour. I was scared the rice might smell like cucumber but it didn't. Everything blended really well. The green skin wasn't stir fried with other vegetables. Just sprinkled on the plate after serving to take fine pictures.

With all the fried rice recipes on the blog already, I don't feel like uploading all the cooking pics. Was grilling the chicken when NEPA  struck, it ended up being fried in hot oil. Who neva sabi cook fried rice? No body.

Pics: More Nigerian School Lunch Box Tips

Ok, to the mailer that wanted to know how I plan and pack kids lunch boxes daily, here is for you. I had to take this pics yesterday morning after cooking. The rice was cooked and the chicken grilled between 6 and 7am Monday Morning. Kids School lunch boxes can cause headaches and chaos in the mornings especially Mondays, if we do not plan ahead. There was a time I resorted to paying for School lunch and it was so much fun and rest but the kids weren't eating well because they complain that Their School food gets delivered in the morning and by breaktime, it's cold, so, I started cooking again. This arrangement here is for 2 weeks of School for 2 Primary School kids. Served on Mondays, Wednesdays And Fridays. On Tuesdays and Thursdays they are given fries (irish potatoe chips) with scrambled eggs and ketchup just like today (I'll add the pics later), or any of dodo, hotdogs, indomie noodles with boiled eggs, sandwich, etc. Each serving is for two, the reason for two pieces of grilled chicken. The chicken here is grilled with jut onion and salt, yet tastes so delicious and juicy. Going to be packed into the freezer as soon a it's cold enough.

I love fried rice with some juicy chicken wing by the side and some shrimp if pocket reach o. I cook without sweet corn most of the time. The few times I added corn to the mix, I'm not sure if I really enjoyed the food. My Own Made Fried Rice

So, I got bitten by the fried rice bug, I decided that after church today, I will experiment what I've learnt so far. This is about the third time I'm cooking fried rice in my entire life.
Pls don't laugh at me o, afterall I already confessed I'm not a professional yet. lol.

But, the fried rice came out well. Quite tasty and oil-less.I shared with my neighbour and my visiting friend. They all enjoyed it. I didn't even put curry or thyme or chicken stock. All I added was knorr
chicken, and fried rice spice. Well, it shows that curry isn't what makes your rice sweet and colourful jor...
Everybody knows how to make fried rice naa,so  just enjoy my pictures.
