Day 21 of My weight loss journey with Nigerian food

DAY 21 of my weight loss journey. Saturday March 24, 2018 This should have been posted like yesterday sef but no problem I'll still post now. After breakfast and lunch, I snacked on 2 cobs of roasted fresh corn, snacked on avocado and 3 very ripe, inviting mangoes. Yes I had breakfast and it was left over Moi moi and just 1 cup pap (Just one cup of pap oh,with peppered moi moi. I ate #Nigerianjollofrice with chicken and cole slaw for lunch but didn't eat dinner because I needed to respect myself after all that fresh corn, mangoes and avocado. Forgot to weigh myself before breakfast so I just let it go



Lunch was Nigerian jollof rice with cole slaw and some protein.

DAY 20, brunch was Nigerian moi moi with 2 boiled eggs, I ate three not that I don't know it should be one moi moi oh, the hunger pangs and taste of that moi moi didn't help at all, early dinner was just soup (My old Nigerian groundnut soup from the freezer) with no swallow, then I served myself some small dessert... the smallest size of my favourite snack that I'm trying to divorce...

81kg till weekend? No I don't! NO WAHALA AT ALL.

Widow who makes N150,000 monthly from selling Akara balls tells her story

widow in her early 50s and a mother of four, Fatima Abdullahi, has found succour in selling beans cake popularly known as “akara”.
Rather than resort to begging for alms, as is common with aged women in some parts of the country, she now makes an average of N5000 daily from selling akara and pap, known as “koko”, to make ends meet.
Abdullahi said she did not require intervention funds from the government or access to micro-finance funds for her efforts and determination to succeed. The enterprising woman, a resident in Rigasa, Igabi Local Government Area of Kaduna State, said in Kaduna on Wednesday that she started the business about 10 years ago after the death of her husband. She said that although she was left with no one to help her and her kids, she disliked the idea of begging and decided to use savings to start the bean cake business. How to cook moi moi with whole coconuts

I shared a moi moi recipe cooked with coconut milk instead of water here, a couple months back. Today, I'm cooking this delicious moi moi with whole coconuts not just the milk o. Coconuts are in season now and less expensive, we'll make the best of the season, load our bodies with all the cocogoodness. No oil added but you can add if you like. The bottle of oil in the pic is because I initially planned to stir-fry the onion, pepper and crayfish before adding, but later CHANGED my mind. These broad moi moi leaves have been preserved for 3 months and they still very fresh.
*TO QUICK-WASH BEANS; Rinse and run in the food processor for just 10 seconds, Add water and filter out the skin, rinse out all the skin in seconds and your beans is clean and ready.
2 cups beans
1 medium sized coconut
1 cup water for blending (To start with, you may need more)
1 large onion
1 tablespoon ground crayfish because coconut loves cray
Boiled eggs
Salt to taste
2 seasoning cubes
Broad leaves for wrapping or tea mugs

1 glass of water, gradually add as pot dries but monitor so it doesn't burn.

How to cook moi moi in tea mugs

If you are one of those who throw away tea mugs whenever an accident breaks their handles, STOP. There is good use for them in that kitchen. With the health implications of making moi moi in plastic containers and cellophane bags, Nigerians are coming up with better, healthier ways of cooking, getting same great flavour and nutrients without loading on cancer and other diseases.
This moi moi cooked in tea mugs is absolutely delicious, cooked through and tastes even better. Aside tea mugs, other ceramic containers can be used to make moi moi. Even in the microwave, we know that heating food with ceramic is way better than heating in plastic plates. We cooked moi moi with cellophane bags before, also cooked in plastic cups but in all I'll say with recent researches and 21st century discoveries, it's best to do the cooking in stainless steel cups ( not aluminium) or ceramic. 

With the presence of blenders, food processors and even graters in the Nigerian kitchen, washing and skinning beans has become very very easy and fast. 


2 cups beans
5 large tatashey (Red bell peppers)
1 large onion
2 seasoning cubes
Salt to taste
1 teaspoon pepper you can add more
Water, just enough to get the consistency a bit thicker than pancake batter

Before you cook moi moi, wash and blend or mill the beans together with the onion, tatashey and pepper, if you are adding hard boiled eggs, boil and set aside, if you are adding fish, salt and fry and set aside. Wash the mugs too then proceed with mixing.
