Concoction jollof rice

This concoction jollof rice happened because I just wanted to make sure the rice has that egg sauce taste that my baby loves. When his food is packed with egg sauce, he eats really well… foods like
boiled yam with egg sauce, plantain with egg sauce or even boiled rice with egg sauce he loves.

I wanted something one pot kind of but with that egg sauce aroma to make him eat but guess what? Even his elder sisters rushed the rice and cleared the pot almost immediately. 

This impromptu concoction rice does not require any experience too. If you can make egg sauce, then rice is ready. I added sweet potatoes because the kids love them and also because the health benefits.


INGREDIENTS:

2 cups rice
1 large egg
2 tomato fruits
1 medium sized onion
1 tatashey
Seasoning cubes to taste
Salt to taste
1 teaspoon jollof spice
Pepper to preferred hotness
1/4  cup vegetable oil
1 sweet potato

Before you cook this concoction jollof rice, wash and peel your sweet potatoes, cut and set aside.
Chop the vegetables and set aside
Whisk the egg with about a tablespoon of water and set aside.


COOKING METHOD: CONCOCTION JOLLOF RICE IN EGG SAUCE WITH SWEET POTATOES

1. Fry the onion and tatashey till fragrant, add the tomatoes egg and seasoning cube, leave to boil a bit before stirring.
2. Stir the egg sauce and add water or stock. I added water.
3. Add the rice and check for salt.
4. After rice begins to boil, add the sweet potatoes. and allow the rice to cook.
5. Once it’s done, serve with boiled eggs, meats, or grilled sausages as shown in the pics.
