Red beans is so nutritious, I tried to eat more but cooking them takes them and can really consume gas. I tried making akara balls, they took long to cook. Longer than akara made with brown or white beans. Some people enjoyed it but I prefer brown or white beans akara. This pictures have been with me for some months now, I didn't
want to share because I didn't enjoy the akara much but decided today to just share incase others like the red akara. We have homemade akara balls on the blog. There is also akara recipe by Rubynnia and many others by me and other blog kindhearted blog readers.

Frying red beans akara
Frying my red akara balls in a deep frying pan.

2 cups red beans
3 scotch bonnet peppers
1 small sized onion
salt to taste
2 seasoning cubes
Vegetable oil for deep frying
The red beans in the picture above is frozen.

1. Soak beans overnight or for at least an hour.
2. Wash and blend the beans with all ingredients to a smooth paste then mix or whisk very well to incorporate air. I did mix with an electric mixer for about 3 minutes before frying.
3. Fry in medium to hot oil till brown
4. Serve with custard or cornstarch pap.
