The reason I quickly tried this homemade puff puff recipe with added ingredients, like eggs and milk is because of the questions we received after I shared my best quick Sunday puff puff recipe on Social Media. It was a Recipe on How to add milk and eggs to Nigerian puff puff.

How Some people on social media wanted to try the puff puff recipe and wanted a more nutritionally balanced snack when it comes to Nigerian puff puff

I replied that they can try making theirs with added ingredients but wasn’t sure how it’s going to taste so I quickly measured out some flour and tried it first myself just to be sure it’s worth it.

Why wouldn’t I try a puff puff recipe with milk and eggs when I know the importance of proteins in these yummy snacks.  Ordinarily, I wouldn’t have bothered much but looking critically at it, the main ingredient in puff puff is white flour and when you use any Nigerian puff puff recipe, you’d notice quickly that there are no proteins in our puff puff recipes. 

Before I created this Nigerian puff puff recipe with milk and eggs, honestly I was worried every time that I go shopping or go to the market and my kids ask to buy them puff puff. There were times I persuaded them to take other more healthy snacks instead but they love the oily and rubbery nature of puff.

My fears died the day I created this puff puff recipe with milk and eggs. I nodded my head and felt really good because now my kids can afford to ask for their favourite snack without mum getting worried about nutrition in puff puff.

 

HOW I STARTED TO COMPARE AND CONTRAST BEFORE ARRIVING AT THIS PUFF PUFF RECIPE WITH MILK AND EGGS

So, after the social media questions on whether it’s possible to have a puff puff recipe with milk and eggs and my kids’ love for the puff puff snack, I started imagining how it will taste like. Honestly, initially, I was worried that because puff puff uses yeast to rise, that the addition of milk and eggs might affect the yeast and prevent the dough from rising.

FEAR OF TRYING NEW RECIPES

That fear lingered in me and wouldn’t leave until I finally tried with a small quantity and you can imagine my joy when even after adding milk and eggs, my dough rose and doubled in size. From that moment, I just knew that this puff puff recipe with milk and eggs is a success and it must be shared with the world.

Sharing this recipe makes me feel like we have conquered in some way by making the traditional Nigerian puff puff more nutritionally balanced for our kids and loved ones. Instead of just feeding them balls of fried dough, now we make the puff puff healthy with milk and eggs in it.

TESTING THE MILK AND EGGS PUFF PUFF RECIPE

My plan was to be quick and then warn all those who asked not to waste their ingredients but right now, I’ll encourage them to add some milk and eggs because these puff puffs are delicious and more nutritious than just plain ones. Some other comments wanted to know how to make peppered puff puff with onions. I’ll post that recipe tomorrow by God’s grace.

To add milk and eggs to puff puff, just add them both with other ingredients, mix very well, cover, and set aside to rise. The addition of milk and eggs will not prevent the batter from rising. When you add milk and eggs, it’s advisable to reduce the water quantity a bit so you don’t end up with watery batter after waiting for one hour to rise.

THE RESULT

The result is awesome! I love it. Milk and eggs in puff puff mean more nutritious puff puff. They started to rise as soon as the batter touched the oil and I think it’s the eggs helping the yeast out. Lol. Because of the eggs added, I used just 1 cup of water for 3 cups flour. These ingredients below produced 37 small and medium-sized puff puffs.

HOW TO MAKE NIGERIAN PUFF PUFF WITH MILK AND EGGS

INGREDIENTS: to add milk and eggs to make Nigerian puff puff 

3 cups flour

1 tablespoon powdered  milk

3 teaspoons yeast

1/4 teaspoon salt

4 tablespoons sugar

1/2 teaspoon nutmeg (optional)

2 eggs

2 cups warm water ( you might need a bit more or less water depending on measurement)

Vegetable Oil for deep frying

PROCEDURE: TO MAKE NIGERIAN PUFF PUFF WITH MILK AND EGGS
  1. Sieve the flour, yeast, milk, salt, and sugar into a bowl and mix.
  2. Add the eggs and warm water and mix well with a wooden spoon or spatula.
  3. Cover and leave to rise for one hour.
  4. Mix, scoop with an ice cream spoon or any deep spoon or your fingers and fry in medium to hot oil. After dropping in the puff puff, if they brown too quickly, then you need to reduce to medium heat and continue frying.
  5. Flip when one side browns and take out of the hot oil when both sides are brown.
  6. Drain excess oil with paper napkins placed in a strainer.
  7. Serve hot with any drink of choice. Zobo drink will go well with this puff puff
  8. Enjoy.

One more thing, please.  The issue of preserving puff puff with milk and eggs in it. I was worried that whenever my children don’t eat all the snacks, there might be a difficulty with preserving them for a few days.

Who wants to be frying puff-puff every day? Where is the time for that? Normally when we make our plain puff puff, they just leave the excess balls covered till the following.

Leftovers puff puff with milk and eggs are very easy to preserve from my little experiment.

 

How I do preserve my puff puff with milk and eggs

After frying the puff puff, if there is any excess, I store in the fridge and they remain very fresh for as many days as it takes before the kids finish them.

My fear that because we added milk and eggs, the snacks will get bad easily is baseless. Not true. Adding milk and eggs to puff puff does not make them get bad easily. The puffs can be preserved in your fridge and warmed briefly in the microwave whenever anyone wants to snack.

After removing your preserved puff puff from the fridge, place in the microwave, cover, and just heat for about a minute and they are ready to serve.

TYPES OF MILK YOU CAN ADD TO THIS PUFF PUFF RECIPE

In case you are worried about what type of milk might be good. Which type to buy when making this puff puff recipe. Here is a list of some milk types I used and the puff puff came out excellent. I feel like any type of milk can be used but just in case you are interested in the exact ones I have tried.

  • Cream milk
  • Evaporated milk
  • Dano slim milk
  • I have never tried using skimmed milk but I think you may just try it. Skimmed milk is actually non-fat dry milk which is very good for baking.
  • Whole milk

The type of milk really doesn’t matter when it comes to making puff puff. What matters is, does the milk have protein? If yes, please use it in your batter.

If you try using quail eggs, duck eggs, and any other bits eggs and your puff-puff turns out right, please share with us. For me, the only eggs I have ever used in my cooking are chicken eggs.

 

FAQ on puff puff recipe with milk and eggs

  1. Won’t the milk and eggs prevent the puff puff batter from rising very well?  My ANSWER is No. These ingredients do not really affect the strength of the yeast. It still rises.
  2. Do we still need to add yeast to puff puff after using eggs?  The ANSWER is YES. You need yeast for every puff puff recipe because, without the yeast, your puff puff batter won’t rise at all. You will end up with a flat puff puff.
  3. Can we fry puff puff with palm oil? My ANSWER is YES.  You can choose to fry Nigerian puff puff with palm oil but be sure to get a different colour because of the colour of palm oil. The end result might not be exactly the same as puff puff fried with vegetable oil. Palm oil puff puff will actually taste good and it’s something I would like to try.
