BEEF SAUCE COOKED WITHOUT WATER, NO CURRY, NO THICKENER

BEEF SAUCE WITH BOILED RICE AND FRIED PLANTAIN

There are very many methods of cooking beef sauce. The one commonly known is the beef curry cooked with baking flour used as thickener. That tastes good but this is without the curry and
thickener for a change. In this recipe, that natural beef flavor is retained, it mixes with the fried vegetables and tastes really good with boiled rice. There is gizzard curry and shredded chicken sauce already on the blog incase you want to check them out.
After frying the onion, green pepper and tomatoes, it's best to turn down the heat and let the beef simmer because you want the juices released into the pot. When the juices are released, there will be no need for more water as the sauce will almost cover the meat. It's also best to wash the meats just before adding to the cooking pot so that the water from the washing , I mean the meat is still dripping water so that helps too with juices release.

INGREDIENTS:
1kg beef. Cut it into tiny pieces when you get home and wash before cooking. You can buy shredded beef from the supermarket if you don't like cutting raw meats.Wash before use.
2 large green peppers
1 large red onion
Fresh peppers
1/4 teaspoon dried thyme
1/4 teaspoon jollof spice for colour (Optional)
2 red tomatoes
salt and seasoning cubes to taste

Note: Cook in very low heat so beef can simmer and release all those tasty juices. Chop all the vegetables and set aside. Wash the beef and cut in tiny shreds if it isn't cut already. Wash and get ready to quick cook.

PROCEDURE:
  1. Fry the onion and green pepper in heated oil till fragrant before adding the tomatoes, thyme, other peppers you like to add and then stir.
  2. Let the tomato boil with other vegetables for about 1/2 a minute before you add the jollof spice for colouring.
  3. Finally, add the washed meat and stir, then cover the lid, cook for half a minute before turning down the heat to simmer and cook slowly.
  4. Check for salt and add if needed. Leave meat to simmer till it begins to boil slowly in low heat before checking for doneness.
  5. When beef is tender (doesn't take long because they are timy shreds), check for taste before turning down the heat and serving to enjoy with family and friends.
