NIGERIAN NUTMEG CAKE

The few ingredients used here are proof that this is a very easy delicious cake to bake. I can eat this particular cake because it's not too sweet. I need to remind us that to bake in a pressure cooker, you need to remove the gasket and whistler from the pot. After discovering how much gas is saved when small cakes are baked in a pressure pot, I don't think I can go back to baking my tiny cakes in the oven. My oven consumes so much gas in those 45 minutes of baking a small cake. I'll leave that for when we bake with more than one baking pan. With a pressure pot, I make use of just one burner. That is like using just the quantity of gas needed to 

boil beans or cook moi moi.. I am baking more smaller cakes now for the kids because I don't have to worry about gas consumption. (Shop small sized  baking oven)

NUTMEG CAKE BAKED IN A PRESSURE COOKER

PIECES OF NUTMEG CAKE

INGREDIENTS:
2 cups all purpose flour (Shop measuring cups)
1/2 cup granulated sugar
1/4 teaspoon salt (Shop measuring spoons)
1/2 teaspoon grated nutmeg
1/2 teaspoon baking powder
250 grams butter. I used 1sachet baking margarine
6 eggs

DIRECTION:
1. Add all ingredients in a mixing bowl the way they are listed above. Starting from flour to eggs.
2. Mix manually until well combined. I mixed with a wooden spatula for about 3 minutes.
3. Pour batter into a greased baking pan and set aside.
4. Cover the bottom of your pressure pot with table salt. Place a few stones (rocks) on the salt, lock the pot and preheat for 5 minutes.
5. Carefully open the pot (Shop pressure cooker) with a little difficulty though because at this point pressure is already beginning to build in there. Place the baking pan in the pot and put the lid back on.
6 Bake for 45 minutes or till a toothpick inserted in the middle comes out clean.
