Fried coconut rice


This FRIED COCONUT RICE is completely different from coconut fried rice. It's simple, cooked with very few ingredients so that the coconut flavour is not overpowered. There's no use of thyme, curry or any flavouring, just the fried coconut milk, proteins, pepper salt and seasoning cubes. No amount of explanation can give the true taste and feeling of this fried coconutty delicacy compared to other coconut rice recipes we are used to.

EASY FRIED COCONUT RICE. Well, I add COCONUTTY to the name because the coconut flavour is strong here. The cooking method is different, the taste is so different. If you love coconut dishes, if you like toasted coconut flakes, you'll love this fried coconut milk rice. Frying the coconut milk is what gives it that
special yummy taste. I have other delicious coconut rice recipes on the blog and wanted to make coconut rice again but in a different way. Wanted something different but tasty and... here it is: 

Too bad I used the poor goat stock but forgot to serve with the meat until the kids asked where is their meat because they saw me grilling it. Won't flog myself sha, I'm not a meat kind of person. There is no way I can cook fish, grill and set aside, then forget to serve it with the food. Can't happen naw. By the time I was asked where I hid their meat, the camera had left the kitchen and I added without remembering to take more pics. Lol. Next time.



 


Fried coconutty coconut rice


INGREDIENTS:
4 cups rice
2 sachets coconut milk powder or 4 large coconuts to be blended and filtered.
2 cups vegetable oil (I used soy oil)
1 medium sized red onion
2 large dried catfish
Pepper (I used 1/2 tablespoon. That yaji sold in supermarkets, that's mixed with dried ground beef) Use quantity you can tolerate.
1 kg goat meat
Goat meat stock 
Seasoning cubes to desired taste
Salt to taste

BEFORE YOU COOK THIS FRIED COCONUTTY RICE, boil the meat with salt, onion and seasoning cube till tender. Take out the meat and dry by grilling a bit, then set aside. You'll need the stock later. 
Mix your coconut milk powder with some water to form a paste that's not too thick, a bit runny as shown in the pictures. Stir and set aside.

DIRECTION:
  1. Stir fry the diced onion until it begins to brown.
  2. Add the coconut milk paste and let it cook till it looks like scrambled eggs
  3. Add the stock , add pepper, seasoning cubes, salt and check for taste
  4. Add the washed rice, stir and if the stock doesn't completely submerge the rice, you can add some water, just enough to cover the rice in the pot, check again for salt and leave to cook tender before adding the washed and deboned fish, stir well and cover briefly.
  5. When your Fried coconutty rice is done, leave for some more minutes to enable the bottom pot char a bit, not burning o.
  6. Serve with the cooked and grilled meats.
  7. Enjoy with friends and family.
