Here is our recipe for Nigerian style cake bread

This cake bread happened without plan. I wanted to bake some bread rolls for my kids on holiday because they asked that they’ll prefer mine to the ones we bought earlier. aol.

And while those were beginning to get bad in the fridge with no one interested in finishing them, I said “ok, let me bake some rolls for you girls” but after mixing, the dough looks really soft like batter.

One quick look suggested that the soft dough might not be able to stand on a baking tray without
spreading because it is soft. So, I got my cake pan, poured everything in there and baked.

No glazing (egg brushing) because it’s not bread anymore. As you look at the top, it’s naked without egg or butter or any oil brushed on.

So, the cake is baked and I’m trying to explain why it looks like bread and like cake in a cake baking pan and honestly speaking, by the time I’m done explaining to kids who kept slicing, I looked back and saw that the rack was empty and the knife they used in spreading butter was left leaning there with a tiny slice meant for mummy the baker, lolz!

So, the bread wasn’t allowed to cool off as I wanted so I take the pics too and share but eating it hot made me feel proud sha. I gave fake scolding for finishing bread while still hot from the oven, pretended to be angry that they didn’t wait, but in my heart I felt happy and proud. Fely like “ok, my baking skills are beginning to excel” Lol.

INGREDIENTS:

1 cup milk
1 tablespoon instant yeast
3 tablespoons granulated sugar
1 teaspoon salt
3 tablespoons softened salted butter
1 large egg
3 cups all purpose flour
1/2 tablespoon melted butter for brushing (optional)

DIRECTIONFOR BAKING NIGERIAN CAKE BREAD

My oven has no temperature setting, I preheated for 15 minutes before baking but you can preheat to about 370 degrees.
In a bowl, add the milk, sugar and yeast. Leave for five minutes or till it begins to foam.

2. Add the salt, butter, egg and flour.

3. I mixed with a wooden spatula for about five minutes, now the dough is soft and a bit sticky.

4. Transfer into a greased bowl, cover with a napkin or towel, leave undisturbed for 90 minutes.

5. Pour in a baking pan and bake in a preheated oven for bout 13 minutes or till the top is brown.

6. If you are going to brush, remove from oven and brush lightly with melted butter.

7. Serve hot the way my kids cleared mine or let it stand for

10 minutes, transfer into a wire rack and leave to cool completely.
