Minced meat stew recipe

This delicious minced meat stew is made from very few ingredients you already have in the kitchen, just some minced meat, peppers, onion, salt, soya oil, seasoning cube and water. I cannot come and be using all my minced meats for only meat pie, something different and  delicious has to come out of this. We made this minced meat stew to serve with boiled rice and when cooking was
done, some members boiled spaghetti while others enjoyed theirs with boiled rice and the reviews are great. I love it too.

INGREDIENTS:
1/2 kg minced meat
1/4 cup vegetable oil (I used soya oil)
1 tablespoon roughly ground or chopped fresh peppers
A small sized red onion
1 seasoning cube

salt to taste

TIP: You can sprinkle in half a handful chopped scent leaves for added flavours.
Freeze the minced meat a bit before use, if you like very big balls in your sauce.

 

HOW TO MAKE MINCED MEAT STEW:

1. Crush the minced meat in a pot with salt and half of the onion.
2. Add just 1/2 cup of water and mix, leave to simmer in low heat.
3. If you like smooth sauce with no meat balls, stir very well and crush all lumps before the meat boils. If you will prefer some meat balls in your stew, then crush a little leaving some boils and as soon as it boils, those meat lumps will harden and become difficult to crush. cook until minced meat colour changes from red to brown
4. Stir fry half the onion with salt, pepper and seasoning cube until onion becomes translucent and then empty into the simmering pot of minced meat.
5. Check for salt and doneness. I wanted to thicken a little more with some flour but my family prefer it this way so we turned off the heat without thickening further and it tastes really good.
6. Serve with boiled rice, spaghetti, yam or even  plantain.
