This is DAY 37 AND 38 MY WEIGHT LOSS JOURNEY WITH NIGERIAN FOOD,

Good morning dear disciplined, focused and hardworking weight losers. We are making our slow and
steady progress. I have been MIA for about 2 days now just managing to like comments and sometimes say something. It has been hectic abeg.

Yesterday I got back at around midnight, tried to upload my meals but started dozing off on the system, had to shut down abeg ‘body nor be fire wood’ On Tuesday I came back very late said I must try and visit our lovely weight losing fam by fire by force. While lying down and waiting for Facebook to open o,

I didn’t know when I dozed off and the phone dropped from my hand, scattered, broke and just lay down there on the floor sobbing, hoping and waiting for me to wake up and do the rescue. Rescue hasn’t even worked sef but we must lose that weight.

Devil is a liar. I’m going to ty and upload my meals even though nothing special on the plate because I have tried my best to avoid fruits and carbs, just going with vegetables and proteins. I’m happy we are moving forward. I successfully departed from the 81kg department that suddenly dragged me in.

Just pepper soup, and vegetables and they are working for me. So yesterday, I baked this cake for my kids as back to school sent forth and I surprised myself by ignoring the beckoning cake.

Me of before before eh? I’ll eat and eat along with the kids and even eat more sef when you add the late night snacking pieces BUT this time, I showed that cake shege and the girls are surprised, they know I mean business now with this weight loss thing. Mummy cannot continue to shop in only plus size boutique, let me shop normal too abeg. 


We are on a weight loss journey and do not need cake recipes now. However, if you have kids and would love to bake for them too the recipe is as easy as ABC. This is Nigerian pound cake.

 

THIS INGREDIENTS:

 

2 cups flour
1 cup sugar
1 sachet baking margarine
6 eggs (These days the eggs are small in size sha)
1/4 teaspoon vanilla essence
1/4 teaspoon strawberry essence

 


BAKING DIRECTION:

 

  • Add the ingredients in a bowl, arranged the way the are written below. Starting with the flour to the essence. Put the flour first before sugar and so on.
  • Mix with an electric mixer for one minute, stop and scrape the ones on the side back into the bowl. Mix again for 45 seconds.
  • Pour in a greased baking pan and put in a preheated oven (The oven should have been heated for 15 to 20 minutes by now).
  • Bake for 30 minutes or till a skewer inserted in the middle come out clean. Bring out of the oven and let it just stand for an hour before you remove from baking pan.
  • Let it cool completely before cutting. Serve the kids with their favourite drink.

Yesterday wednesday I couldn’t fast because the medications I took the night before require that I eat early, so I ate that small goat suya and a cucumber. I apologize again for my inability to slice the cucumber and present properly. I was just biting and chewing like that while moving in the car. In the evening, I still took pepper soup. So, that’s where we are. Today, I’m 80.5kg as I slowly slide into 79 kg.
