Step by step recipe for Braided bread stuffed with stir fried minced meat

Braided bread stuffed with stir fried minced meat and vegetables.
Braided bread is made the same way my caterpillar bread is except for the braiding. If you can bake my caterpillar (Minced meat) bread, then this should be very easy to understand. For the filling, you can chose vegetables, chicken, any filling you love just let it not be watery to avoid messy braids. 

I used
  • 8 cups (1kg) flour
  • 4 teaspoons of yeast
  • 6 tablespoons of sugar
  • /2 teaspoon of salt
  • 5 eggs
  • 2 cups (500ml) warm milk
  • 3 tablespons vegetable Oil

1/4 kg of minced meat (You can blend your beef or buy minced meat from the supermarket)
3 medium sized onion bulbs
Seasoning cubes to taste
5 large Scotch bonnet pepper without the seeds
1/2  cup Vegetable oil or more for stir fry

First stir fry the onion, pepper and minced meat. Add seasoning and turn off the heat.

  1. In a bowl, whisk the warm milk, sugar, salt and yeast together, pour into an airtight container, cover and allow to stay for about 10 minutes. It will rise a bit and look foamy after that time.
  2. Add the eggs and mix, then start adding your sifted flour gradually while mixing with your fingers or spoon until you see that flour is no longer sticky on your fingers. You may need more or less flour than I used to achieve this. Always keep in mind that the more you knead the dough, the softer it becomes. I kneaded until it felt soft and fluffy without sticking to my fingers.  After kneading, pour some oil on the round dough in a bowl, cover and put away for about 10 minutes or more but not too long else it begins to ferment.
  3. Bring out the dough and knead again. Roll out on a lightly floured surface and cut, then roll again to create an oval or rectangular shape.Cut the other end like stripes, cut the end closer to you too as shown in the picture below. While cutting, ensure there is an un touched middle where you can place the filling before braiding. Fill in with your sauce or whatever filling you want to use as shown below. Braid and brush some milk or egg white at the ends to help dough stick and stay stuck together during baking. Place on a greased or lined oven tray, braid both ends of cut stripes as shown below. When everything is braided and ready, whisk a little milk together with an egg and brush the bread before putting in the oven.
  4. Bake in a pre-heated oven for 10 - 15 minutes or till bread is brown...
  5. Serve with a hot cup of beverage (Naija Tea).

 Dough, cut into smaller balls, rolled and cut into stripes with a knife.

Stir fried minced meat, onion, pepper and seasoning.

 Scoop minced meat and place gently on the cut dough

 Lay the stripes across, on the filling. For those with an idea of hair braiding, this should be very easy,

 Continue until you get to the end and stick both ends with egg white or milk

 Glaze (Brush with egg mixed with a little milk) "Egg wash" as we say in Naija

 Bread baked in about 10 minutes
