Spaghetti with vegetable sauce

Spaghetti boiled with tumeric & served with vegetable sauce.

 This vegetable sauce is both delicious and nutritious.
INGREDIENTS for boiling spaghetti

  1. Water
  2. Drop of vegetable oil
  3. Salt
  4. Tumeric (Optional)

INGREDIENTS FOR PASTA VEGETABLE SAUCE:
  1. 3 cups Vegetable oil
  2. 1 small bunch green leafy vegetable (Amaranthus/Aleho/green)
  3. 2 large tomatoes
  4. 2 eggs
  5. sardines or any fish of sauce. I used 2 cans of sardines here
  6. 2 Seasoning cubes
  7. 2 medium sized Carrots
  8. 1 large Red bell pepper (Tatashe)
  9. Scotch bonnet peppers (Optional)
  10. 1 medium sized Onion

Cooking Procedure
  1. Stir fry onion and other vegetables in hot oil and seasoning
  2. Add the whisked eggs and stir
  3. Add the green leafy vegetables last, stir very well for about 30 seconds, check for taste and quickly turn off the heat. Do not let vegetables overcook.
