This is how to cook okra stew with smoked fish for yam, rice, and plantain. This okra stew recipe is follow come. It followed me from growing up season in my village down to Abuja. Growing up in the village, this was how we made stew with excess okra and served with carbs.

This method of making okra stew is very inexpensive. With a small bowl of fresh okra and smoked fish, your stew is ready.

My okra stew with smoked fish can be cooked with any smoked fish of choice but I prefer smoked catfish or smoked Titus fish (Mackerel).

This recipe I’m sharing with the world today is my husband’s favourite okra recipe. This was actually made for him but the girls joined and cleared the pot. Whenever I cook okra sauce this method, hubby eats really well. He loves it with boiled rice too but I have not tried serving myself with rice. I always go with boiled yam or boiled unripe plantain.

INGREDIENTS FOR Okra stew with smoked fish for yam, rice, and plantain

  • 1 mudu (Small bowl) Okra
  • 1 small onion
  • Palm oil or any cooking oil of choice
  • Roughly ground Fresh peppers
  • Crayfish
  • Smoked fish
  • 1 wrap Dadawa (Locust beans)
  • Seasoning cubes to your taste
  • Salt to your taste
  • Water

Sometimes I make this okra stew with vegetable oil and it also turns out really delicious but Today I wanted that palm oil bright color in the stew.

DIRECTION FOR MAKING OKRA STEW

  1. First put cuts on the okra and boil together with the peppers. When it’s a bit soft, take out of the hot water, beat with a blunt knife or table knife, and set aside. Pond the boiled pepper with crayfish and seasoning cubes too and set aside.
  2. The next step is the frying of the okra. Add chopped onion to the heated palm oil, stir and add the washed smoked fish and pounded ingredients. Stir and cover for about a minute before adding the beaten okra with some of the water from boiling the okra. Stir, check for salt, and seasoning before covering the pot again to boil briefly. At this point, if you need to add salt or seasoning cubes to enhance the taste, feel free to do so to your own taste.
  3. When it boils, stir again and check for taste again.
  4. Turn off the gas cooker or stove and serve your delicious okra stew with some boiled unripe plantain, boiled yam or rice.
