LUNCH BOX TIPS FOR NIGERIAN SCHOOL

 

Pics: More Nigerian School Lunch Box Tips . Ok, to the mailer that wanted to know how I plan and pack kids lunch boxes daily, here is for you.
I had to take this pics yesterday morning after cooking. The rice was cooked and the chicken grilled between 6 and 7am Monday Morning. Kids School lunch boxes can cause headaches and chaos in the mornings especially Mondays, if we do not plan ahead.
There was a time I resorted to paying for School lunch and it was so much fun and rest but the kids weren’t eating well because they complain that Their School food gets delivered in the morning and by breaktime, it’s cold, so, I started cooking again.
This arrangement here is for 2 weeks of School for 2 Primary School kids. Served on Mondays, Wednesdays And Fridays.
On Tuesdays and Thursdays they are given fries (irish potatoe chips) with scrambled eggs and ketchup just like today (I’ll add the pics later), or any of dodo, hotdogs, indomie noodles with boiled eggs, sandwich, etc.
Each serving is for two, the reason for two pieces of grilled chicken. The chicken here is grilled with jut onion and salt, yet tastes so delicious and juicy. Going to be packed into the freezer as soon a it’s cold enough.

 Ingredients For This SCHOOL LUNCH BOX Fried Rice:

  1. 3 cups basmati rice
  2. 1 medium sized onion bulbs added to boiling rice
  3. salt to taste
  4. 1 tiny pack vedan seasoning to add while rice is boiling
  5. 2 seasoning cubes for the vegetables in oil
  6. 1 medium sized tatashe red bell pepper
  7. I cup green peas boiled before adding to veggies
  8. 3 large carrots
  9. 2 medium sized onion bulbs sauteed with the vegetables
  10. 1 teaspoon tumeric
  11. 1/2 teaspoon curry powder
  12. Water
  13. Soft Chicken to be grilled without a normal grill oh, and, served with the rice.
When you cook, remember to reward yourself with some scoops before packing away.

 One plate of fried rice  is just enough for 2 lunch boxes.
 
 Feels right now like I should have scooped some for myself too, the labourer deserves to taste some
 
The colour is so bright because I added turmeric, the fried rice spice I have turns it green and I refer kind of  a bit yellowish.  I don’t need to add the recipes, we have many fried rice recipes on the blog already.

Have fun packing lunchboxes and dropping them off at school before Morning Assembly.
