Fresh Fish Stew By SeyiFunmi Meg Rickett How to cook fresh fish stew with palm oil and tomatoes. This delicious local fresh fish stew we cooked using palm oil and fresh tomatoes is one of the best tomatoes I ever tasted.

To cook Nigerian stew with palm oil, all you need is a few ingredients including fresh tomatoes and palm oil.

Ingredients to make fresh fish stew with palm oil and fresh tomatoes

  • Fresh tomatoes
  • Palm oil
  • Onion
  • Fish
  • 1 clove Garlic
  • Pepper same quantity as tomatoes for peppery food  lovers (Scotch bonnet or any pepper of choice)
  • Seasoning cube
  • Kpomo (Cow skin) This is optional
  • Salt to taste.

There’s a technique for making this fish soup.

This technique will ensure you get a particular taste and texture.

I am going to tell you that technique
No, I’m not going all Yoruba-ish on you, but this is my dad’s personal method, and it has never failed to produce the same effect… the deliciously unique effect. Ohk, here’s it… no big pepper.

Just tomatoes, the small pepper, and onions.

Make sure the tomatoes and pepper are of the same quantity, then make onions half quantity, add a clove of garlic ( not a bulb). Then blend till very smooth.

 

Cooking Direction

  •  Blend ingredients: Tomatoes, pepper, onion, garlic together
  • Heat palm oil to fry the blended tomatoes and peppers
  • Add blended ingredients to the heated oil, cover the pot, and let them boil.
  • Open, add the washed fish, check for salt and seasoning, and add if needed.

Let stew boil again and check for thickness and taste before removing from heat. The consistency should be just a bit thick like soup not very thick. Good to serve with boiled rice, pasta. plantain or yam.
