Eggs In Tomato sauce

 Hi WC readers, I’m here again, and, this time, I come bearing a recipe for Eggs in Tomato Sauce. I hope you make it, and enjoy it.

I like this recipe because the eggs don’t disappear into the sauce, and the tomatoes are not cooked into submission. It’s a really fresh dish, and it’s very versatile-you can use it at breakfast, lunch, or dinner. You can use it as a side or main dish (I always eat this by itself, my DH, on the other hand, is a hungry lion, he eats it with yams, potatoes, plantains, whatever). The options are
endless. You can also use boiled eggs instead (just use a small pot, so the sauce can cover the eggs. Prick the eggs to allow the sauce permeate, then add 3 minutes before you remove from heat).

Ingredients (this serves 2 or 4)

5 large tomatoes, chopped
4 eggs
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small red onion, sliced
3 atarodo (scotch bonnet), chopped
1 tablespoon of tomato paste
2 tablespoons of olive oil
2 teaspoons of Paprika
1 teaspoon of curry powder
pinch of ground cumin (optional)
2 teaspoons of salt
2 stock cubes

Method.

Break eggs into 4 different bowls. Sprinkle 1 stock cube over them. Set aside.

Set a large frying pan over medium heat, add the oil.

After 1 minute, add the onions, sautee for 2 minutes. Add the green and red peppers, atarodo, and 1 teaspoon of salt. Stir and sautee for 3 minutes.

Add the chopped tomatoes, tomato paste, cumin, curry, paprika, and the remaining stock cube. Stir to mix, and cook for 3 minutes.

Taste, and if necessary, add the remaining salt, and stir.

Make 4 holes in the sauce, and pour one egg into each hole. Cover the pan with a tight lid, reduce the heat to medium-low, and cook for 5 minutes (check to see if the yolks are as set as you like).

Remove from heat, and enjoy!

  1. Yes, you can. The difference in taste will be subtle, but it will still taste good. You can find cumin and paprika in the spice department of a well stocked store.

My wife has her own event planning, catering and interior decorating outfit, she started the business when we lived in abuja but we relocated to our own home in lagos, january 2012.
    Due to the fact that most of her jobs come from abuja she is mostly in abuja, during weekends to oversee weddings and stuff like that. I am not complaining. When I am not home, and she is away, our kids are always in the care of our nanny. I really do not like this and I have told her severally, but once again I am not complaining.
    I support her, and love the fact that she is hardworking and all, but my wife uses ALL her money to buy jewelry and shoes. I am not joking. She has 3 boxes of jewelry. Its her money, yes. But she has never thought of using any of it for something productive, never! My wife told me, that she will never in her life use her money to buy anything for the kids, that they are my property. My wife is the stingiest woman in the world.
    She will never get me anything on my birthday, I have bought her two cars and taken her on trips, she gets me low budget cards. J am not complaining.
    This is what I am complaining about :SEX! She is stingy with it, whenever she comes back from her trips she will say "do you know what I did last weekend? Abeg let me rest"every night o! Till weekend comes again. Guess what? I have gotten my self a pretty European girlfriend, and she buys me little meaningful gifts, to show, someone remembers me when shopping. She works really hard, and even has a kid but she still takes time to enjoy sex with me.
    I cant wait for you all to crucify me. When you meet my wife, you will wonder how I cope.

  4. I hate stingy ladies. My aunt is like that, thank God I moved out of thst house. If my aunt's husband is not around, she will never cook soup or stew, just indomie or concoction rice! She has 3 kids that are malnourished, her husband gives her 150k every month, her account blance the last time I went to the atm for her, was M3.4. when I lived in that house, during my youth service, my boyfriend will send me money and I will use my small money and be feeding a rich family can you imagine? During weekends I will cook all sorts of soups and stew and she will be ordering house maid anyhow to make semo for her and boil rice for her. I did it for my cousins, see the mighty house they live in pourt Harcourt, but stinginess dosent let her feed well. Let me tell you what this one uses her money for its called CLOTHES. Tufiakwa for my aunt! Pls feed your children! I hope she reads this.

  5. Sorry to say, but I don't see how you cheating on your wife is a solution, especially of you still plan on remaining married to her. A lot of men need to understand that deres something called counselling and working hard for your marriage. Such a shame tho.

  6. Sorry to deviate from original post, dear chidnma your food is nice.To d man who has an European girlfriend, im 100% sure I know your wife.she attends winners chapel, and you are a Catholic. When u ppl were in abuja, everyone knew her in winners. She wears gold jewelry that touches her toes! LOL! Her former househelp ran to pastors house she said ur wife almost killed her, and accused her of sleeping with you. I can remember when both of you were entering different cars to church! But oga, you didn't add that your housemaid comot belle for you.*runs away*

    People are managing to stay under the same roof just to maintain that Status '
    Your marriage hasn't gone beyond repair. Since there are no marriage counselors over here, maybe try to make you both see her pastor for counseling. Be wise so you don't ruin everything.
    The Euro lady doesn't make you truly happy, you wish your wife will try even a bit. You don't sound like a man who enjoys cheating on his wife. This is your family and you have to fight for it.
    She needs someone she respects to talk sense into her head. Does she read this blog?

Teach our men that kind of love that made Christ die for his church. Teach them that wives are not second class citizens, help men to know that a lot of times, wives just PRETEND to be fools o.

  10. Oga poster, I pray that God gives you wisdom. You still love your family a lot. You just needed to talk and that you did here. If the other woman knows you are married and she is only a mistress, what makes you think she'll have just you alone? That is how the HIV virus is spread sometimes.
    And for madam, if you read this blog. Pls know that very soon, you won't be able to do all "these" again cos OLD AGE will come knocking and family will be what you fall back on. Please invest in family before it's late.
