Special Potato Salad By Omalicha

Potato salad with corned beef
 Hello fam! I missed everyone and all the wonderful recipes and posts on the blog..was away for a while but now im here. Trust me to go to older posts and look at all the fun you'all have been having!
  I made this potato salad for my cuzn who loves anything with mayo! On request he asked for lots of extra mayo, personally I would have preferred it if it wasnt much, but this is a birthday treat!so I cldnt argue. Lol..enjoy.


~INGREDIENTS~
Irish potatoes
Carrots
Spring onion
Eggs
Corned beef
Sugar
Black pepper

~Method~
♥Dice washed potatoes, and put in a pot to boil till tender
♥Grate carrot and slice spring onion
♥when potatoes are boiled, seive away water
♥Remove corn beef from can.
♥in a large clean bowl, add potatoes, and little black pepper
♥Mix gently (unless you love it mashed!)
♥Add carrots, , spring onion, and fold gently into potatoes, preferably using a wooden spoon or spatula
♥Add little sugar (optional)
♥Add mayo and diced boiled eggs, and mix completely
♥By all means eat!


You can add and subtract as you like, #yolo#

    Nice one dear!
    But I wonder why your cousin would love SUGAR in a healthy veggie salad. It defeats the purpose of the veggies! Corned beef, eggs and mayo are the farthest one should go.

    pls omalicha help a sister who can't eat food due to pregnancy. I easily get fed up with our daily foods. I.e rice, beans, yam, eggs even tea and bread.

      Ha...iv never been preggy b4, I can only imagine,,,,, uh have you tried fruit recipes? My sister ate mostly fruits during her pregnancy. You might be amazed that fruits will help.

      I agree with you anon 7:04 but we love it like this, and we love her and love her food, and I rather marry her and she serves me this everyday than associate myself with bitter ugly you. Omalicha, pls reply my mail.

      No, it's not our normal pepper, it's small, round and black, just like oziza seeds,you can get it @any good supermarket or spice store.
      Reduce or remove the mayo, fling the corned beef,subtract the sugar and substitute with sweet potatoes and you have yourself a healthy and "nutritious" recipe *wink*
