Here is my NAIJA CLUB SANDWICH WITH A TWIST By Zinny. There are no laid down rules as to the contents of a sandwich. The fillings in a sandwich are basically by choice and this ought to qualify our ‘bread and akara’ as a sandwich!

This particular club sandwich was inspired by the presence of Avocado pear! Yes, they are very much in season and are been flaunted everywhere by the sellers; in the market, street corners etc. Avocado pear is a very healthy and tempting fruit. Its calories content are very healthy and for a person dieting, you can take a whole pear for a standard meal.

In making this club sandwich, I deliberately didn’t use margarine and mayonnaise because I don’t eat them with bread and also to check weight gain. You can also twist yours to include Nutella, Skippy, Jam, peanut butter or other bread spread.



INGREDIENTS FOR NAIJA CLUB SANDWICH:  


4 slices of bread
1 big sized Avocado pear(ripe and soft)
One tin of sardine
I hard boiled egg
Lettuce
Cabbage
Carrot
I big size ripe and hard tomatoes
One tablespoon of peanut butter.


METHOD:

  • To drain your veggies and keep them almost moist free, start with them.
  • Grate your well washed carrot(scrap the first layer) and cabbage and place in a sieve to drain.
  • Slice the lettuce into very tiny bits, remove the seeds from the tomato and slice thinly and place them in a sieve.
  • Separate the oil in the sardine from the fish. Mash the fish in a plate with just about one tablespoon of the sardine oil and set aside.
  • For the remaining sardine oil, pour into a small bowl containing the peeled avocado pear and gently mash to a paste, then set aside.
  • Cut hard boiled eggs into tiny bits. Place two slices of bread and cut off the brown edges(as shown in the picture). This is done just for beauty and I didn’t toast my bread too.
  • Cut the bread once diagonally to get four triangular shaped bread. All is set for the filling.
  • In the bowl containing the mashed sardine, add the egg, cabbage, carrot, lettuce and some tomatoes and lettuce(please set aside little tomatoes) Please feel free to fill as you like and if you don’t like the bland taste of the lettuce, please mix it with the sardine.
  • For those who have caught the Moringa bug, you can alternate the avocado pear with moringa powder.
  • Cream one surface of the first slice of bread with the pear paste, sprinkle some tomatoes for effect and some pieces of lettuce(if you don’t mind the taste). Cream another bread slice with the pear paste and cover th first slice. Gently spread peanut butter on the top of the second bread slice(first beat the peanut butter a bit to soften it). Place the third pear creamed bread slice next to stick firmly.
  • Cream the top of the third bread slice with the pear paste and spread the mashed and mixed sardine, cabbage, carrot, egg on top and cover with the last pear creamed bread slice. I placed mine in the microwave for 2 minutes to get it warm!
  • Remember you don’t have to fill accordingly. The choice is yours. ideal for brunch, especially for those fasting its satisfying and kids love it.
