OMALICHA, I Need Your Help Before I Lose My Husband

Hello Aunty Eya,please is there any way I can contact the lady who puts up foods and their recipes in your blog? I think her name is OMALICHA, I want to learn how to prepare some delicacies esp for dinner and even what to prepare, am losing ma hubby in terms of meals. 

He likes having light meals at night and each time he gets back and is not satisfied with the meal in the house he keeps complaining and threatening to bring in someone that will be cooking for
him, am so desperate it’s not that I can’t cook but what to mix and match that tastes nice.

 He always wants me to bring ideas of what he will eat saying it’s my duty which I know but sometimes even the one I prepare he won’t eat but request for something else that’s why I get confused most times.

  1. Good post. I myself get confuse on what to make for my family, most especially for dinner. Cos that's when d whole family is around to the same meal. I notice what I prepare most time is almost a repetition.

    Eya and WC members, I think it will help some of us, if possible to post a meal table to help us on what to make for atleast a week or so.

  5. 1• Oatmeal and raisins with egg moin moin

    2• Fried Yam chips dipped in sauce(any type. your hubby likes) but preferably egg sauce.

    3• French toast with sausage and bananas and any beverage of his choice/tea

    4• Fried/boiled Plantain and sauce with egg moin moin/bacon/sausage or

    5• Hot Noodles (just grate 1 carrot in it) add little curry nd pepper. Can serve with either boiled or fried egg. And any beverage of his choice

    6•pap/custard with bread,and any bread spread he likes.(U can add moringa seed powder to the pap,only if he likes it o)

    7• U can get a pack of pancake mix and use it to prepare pancakes it faster,serve with syrup,nd banana.

    8• If u have cupcakes u can serve him with hot milk.

    9• Baked beans,scrambled eggs,bread(toasted,french toast,or just plain) served with any beverage of his choice.

    10• Fruit in fiber cereal

    NOTE
    Hello,these are some breakfast recipes I came up with,this is actually what we eat @ home,though it may sound unrealistic to some,but its easy to prepare here are some helpful tips.

    1.Always have sauce in the fridge,like the egg casserole,it can be served with fried yam/potatoes. Also fish sauce,then simple sliced tomatoes,pepper and onion gravy always come in handy,have this in the fridge too,as well as corn beef sauce.(Corn beef with tomatoes nd etc),if u have like 2 or 3 sauces in ur fridge,it makes things easier. Just label
    The plastic containers,make little bit of each one.

    2. Egg moin moin is simply this :beat your eggs and add everything inside like you want to fry it. then put it in white transparent nylon,tie it,leaving space for air,and boil like your boiling moin moin. it cooks in No time,and its like eating boiled egg,with everything inside. with 2 eggs,u can make 4 one person bcos it really swells. its just different 4rm d egg we know,nd u can add anything in the mixture,tomatoes,onion,sardines,anything,before boiling.

    3.French toast is just: beat your eggs with salt or sugar,dip your sliced bread in it till the two sides are soaked in egg,fry with very very little oil,till golden brown. flip both sides,its very tasty.

    4.Go 2 d super market,get bacon,sausages,canned beef,sardines,cereal,(fruit n fiber is awesome),baked beans,raisins,pancake mix,syrup. if u get two of each of this,it would last a long time,pls after u have taken the quantity you need,do not store in the fridge with the can,remove it from the can and store in a plate or just use d rest for sauce.

    5.Have bananas handy,there are very good. carrots too,and other veggies.

    6.Imagine! Imagine! After every meal listen to his opinion/comment,and keep adjusting.

    2• For plantain,yam and potato dishes, u can make yam porridge with ugu(pumpkin leaf) or mint leaf(scent leaf)adding lots of dry fish and shrimp and little palm oil,you can also make without the palm oil,using little vegetable oil,or no oil @ all.
    You can also make plantain porridge (unripe/fairly ripe) either alone or u mix it with sweet potatoes. this comes out very well. Just try porridge with unripe plantain+sweet potato add shrimps,carrot and fresh pepper(no palm oil).
    You can also make irish potato with yam and beans together as porridge,with or without palm oil.
    Try making beans with fresh corn,they sell corn in the market,already removed from the cob. or u can buy the corn And do this yourself,its really very nice,preferably with palm oil and green leaf.
    You can boil white yam,plantain,potato and serve with gravy/sauce,there are different types of on the blog. I will put up the links.
    You can make "ji obibio" fry fresh pepper(ground),onion,crayfish,dry fish and lots of "ugba" in a pot. add your salt nd seasoning. naturally we add little potash. add ugu and use it to eat boiled yam/plantain. but if my mum is making this,she adds okro to the sauce. this is how she does it,she boils the okro after washing and cutting off the head,then when it is very tender she pounds it. and adds to the ugba mixture. if she adds okro,she doesn't add ugu and if she is using ugu she doesn't add okro.
    Do you know that u can use vegetable soup to eat yam?yes you can. and if you make vegetable soup without water leaf then u can use to eat rice as well.
    I have prepared all these before and they turned out nice pls add your own swag when making it,always add your own stuff.

  8. 4• For stews,I have 5 different methods of preparing stew and they are simply because of taste. I like my stew to taste different.@ different intervals
    »NORMAL ME STEW – I do not use tin tomatoes in my stew. I don't try it at all,I only use it for jollof rice. After you have your blended fresh tomatoes and pepper paste,put it to boil do not cover the pot. Leave the pot open,don't add anything like seasoning to it,just make sure the water dries away,and the tomato paste becomes very thick like the consistency oth tin tomato. Then,in a dry pot,u heat your vegetable oil,slice in onion(if you like),and add the tomato paste when the oil is very hot. start frying. keep stirring this don't allow it to burn. How do you know that it is fried? When it starts forming seeds like scrambled eggs or like egusi. After that,add your meat or chicken stock. And now you can cover the pot and allow to boil. You can add more salt/seasoning/curry thyme/if you taste and feel the first one you added is not enough. This is how I make my normal stew.
    »2ND TYPE: sometimes you don't want you tomatoes blended. you want to taste everything. so I spend time to cut everything. probably pound pepper or use a manual/hand blender. fry in your vegetable oil,and u can boil your meat in it. or add little stock. this type is usually good with spag/yam.
    »3RD TYPE: your blended tomato/pepper paste will be added in a pot containing hot palm oil. immediately add all your seasoning(apart 4rm curry and thyme) and leave the pot open. after like 10mins,I add my meat in it,prefer if whatever meat I'm using cooks in it. I cover the pot after this. pls check for seasoning. this stew is better with dry fish.
    »4TH TYPE: Everything diced like 2ND TYPE only difference is the addition of ugu or green or scent leaf(any one u like) u will add enough of this o,not just smallish also the addition of crayfish. use vegetable oil,better with dry fish.
    »5TH TYPE: blend your pepper(including the dried pepper)lots of pepper this time,with tomatoes,onion,crayfish. pour inside a pot containing hot palm oil and the yoruba spice called "iru" season and cover immediately. better with goat meat. boil your goat meat in it.
    Everyone can also add more types,like ofe akwu,"agoyin stew",fisherman stew,etc. I'm just tired of typing. lol

    >UZIZA nd UTAZI soup
    -its just the same process with oha only different is the leaf. buy very little utazi and more of uziza(cos utazi is bitter) after you have steamed your meat and stock/dry fish with all the necessary stuff,including adding ogiri,crayfish,pepper,achi or ede(cocoyam),I also add spices like uda(blended already,just about a pinch) ehu(about a pinch).when the soup is ready you add your utazi and uziza and bring down form heat. That's all.

    >MY SPECIAL OGBONO.
    -i steam my meat with ogiri(okpei), cameroun pepper, crayfish, yellow pepper,(ground), uda(ground one,about half a tb spoonful), ehuru(ground about half a tb spoonful), banga spice(the seed like one that is dark,ground,about half a tb spoonful), uziza seed(ground), blended ginger and garlic(my most important ogbono ingredient)palm oil.
    By the time this is boiling the members of your family will be be so interested in what you are cooking,cos the aroma can move mountains. when your meat is tender,add ogbono,and probably a little bit more water,taste for seasoning.
    When completely cooked add,your vegetable.it can be ugu,bitter leaf,uziza,or even scentleaf.
    This ogbono recipe is exclusive to my family. now I have shared. Una go pay me o,cos after cooking this one,your husband will propose again.

    >EGUSI:the normal egusi you know,just try it with "agbo leaf" yes,agbo leaf. Also try it with scent leaf or bitter leaf or uziza.it gives it a different taste.

You can also learn how to bake,grill fish/chicken,prepare meat balls,make pizza(I haven't done this yet),make country fried chicken,donut,egg roll,pancake rolls,mosa,like 6 different types of salad,keep making use of google,watching more cooking programmes,exchanging recipes,etc.but most importantly,INVENT SOMETHING TODAY.keep inventing your own stuff. I love that,every meal was a product of someone elses imagination. And I watched on food network where "OKRA(OKRO)" was used in 10 different ways. They even baked it,made a juice with it,etc.nd over here,if its not okro soup,we never start.lol.

  13. Dinner should be light. That's what we have been made to understand especially to aid digestion. But I will not lie,sometimes we eat eba nd soup in my house @ night,lol. tho my sisters would just lick soup,no swallow.

    1•Fruit salad .this should include a whole variety of fruits you love.u can serve with milk,or just alone.

    2• pepper soup and yam. It actually depends on how many pieces of yam. I think 2 is okay.it can be fish peppersoup/assorted meat.

    3• Irish potatoe and cornbeef sauce. Add shrimp to your corn beef sauce its nice! You can also decide to make it in form of porridge. If you are boiling the potatoes seperately you can add salt.bland boiled irish Potatoes don't taste good to me.

    4• Get coconut milk extracts either by blending coconut,or you can buy if u don't have the time for that. Use coconut milk to prepare spagetti or macaroni. Yes,it tastes nice. Add kidney beans and fresh pepper and that's all.

    5• Moin-moin and pap.

    6• Noodles with green. You can use green vegetable in your indomie,you can use ugu also.don't panic you will love especially if there is fresh pepper and onion

    7• Ukwa..also known as breadfruit I guess.prepared like beans adding dry fish,pepper,crayfish,seasoning.and eaten when really tender.its more nutritious than beans so I heard

    8• Mosa and pap. Mosa is made from very very ripe plantain,pounded/blended.adding crayfish,pepper,seasoning(just salt i prefer),whisked egg,and little flour.after the mixture is in a paste(like akara paste) it is fried like akara. tasty.

    9•shredded chicken and potatoes. Marinate your shredded chicken very well. You can add little bit of honey too. Stir fry in little vegetable oil till golden brown.add sliced fresh,red,yellow and green pepper nd onion. Cut your boiled sweet potaatoe in really small cubes,even if its looking mashed no worries,mix together with the stir fry.

    10• Buy suya. Assorted meat suya or just kidney suya. Buy enough for the family. Use it to prepare gravy. This gravy should include tomatoe,onion,pepper. cabbage. seasoning. Serve with white rice or pasta.

    11• Keep creating and don't 4get to share with us.

  14. Hi poster, the secret of making good meals is developing love for cooking and doing research, yes research! You can use your phone or laptop and visit nigerian food blogs like dobby's signature, mybelledonfull, kitchen butterfly, funke koleosho's blog etc, you can also visit other country food blogs, just type in the country you want on your google space bar eg "canadian food blogs" and search, different names will come up, watch food channels and tv, buy recipe books etc. Also, if you have an ingredient at home and you're short of ideas, google recipes using that ingredient eg if you have soya beans at home and besides soy milk and toasted soy powder, you can google "recipes using soya beans" and please, as much as we love eating good food, we should try as much as possible to eat healthy too,eg, switch to wheat bread for white bread, cook with basmati rice and brown rice often in place of normal rice, substitute avocado for butter even in baking and for recipes that call for white flour, you can use other types, you can even make yours, it's really easy eg. For wheat flour, just buy wheat from people who sell grains at the market and use your dry mill blender to blend until really smooth or you use the big engine blender at the market. And try to reduce your intake of tinned foods like sardines, geisha and corned beef because they are filled with sodium and preservatives which is not good for the body, geisha is just mackerel(shiny) in tomato sause, for sardines, buy the fresh titus fish in the market and cook with it, for corned beef, just mince beef and use it to cook, sausages too are very unhealthy, reduce your intake of it and make yours when you can, it's just minced(blended) meat of your choice with different spices and please when you use vegetables like green pepper and carrots to cook, eat up immediately cos if stored, all the nutrients go off leaving you with only chaff, if you want to store in the fridge, be sure to add more fresh veggies while steaming it up and also try to remove half or all yolks from your eggs before cooking/eating and please do not use store bought pancake, use wheat flour to make your pan cakes whenever you use white flour, try to top up with other healthy things, like mixing the pancake mix with oats and banana before frying (banana flapjack).
    It might seem too much but when you cultivate the hobby of cooking and also healthy eating, it will come naturally and your hubby will thank you for it.

  20. I m soooo going to try this special ogbono soup. Pls Omalicha, do u just add the ground ogbono into the soup or do u first add water to d ogbono to make a paste before adding it to df soup? Gush! I hope i wnt mess it up*heartracing*

  21. I Add the ground ogbono to a metal plate with little palm oil,an put it on top of the pot that has boIling meat.as the meat boils,the ogbono in the metal plate will melt.,then I add to the meat.Don't forget all ur ingredients wouuld have been inside the meat apart 4rm ogbono nd palm oil.

Pls aunty Omalicha and all the Igbo WC,is they no any means of getting breakfast,lunch and dinner that can hold one's stomach cos I'm preggy and non of those recipe seems to hold my stomach and that of my family cos they love to eat local food and the only thing that seems to be avalible is rice,pls I need help cos I'm loosing my head thinking on what to cook apart from rice oh, pls help ur sister.

Madam,if u go through my previous post on lunch ideas,u'll see up to 7 different types of soup.that should be able to hold ur family's stomach.did u open the links?I also put up a recipe on yam and ugba sauce.that's a heavy meal.pepper soup can also be served with yam porridge,yes it can,and even cat fish pepersoup.just make unripe plantain and yam porridge,mash ripe plantain and add to the porridge to make it pasty nd sweeten it.then make peppersoup,preferrably catfish and dry fish,use it to eat youjust read through and try to be innovative.Thanks.
