Potato, Prawn And Vegetable Stir Fry By Lizzy Obaze. Hello Sis. Here is the recipe as promised. Like I mentioned earlier there is no step by step guide/pictures. The ingredients and cooking direction is detailed enough to help anyone reproduce this.



Ingredients:

extra virgin olive oil,
king prawns,
new potatoes,
onion,
garlic,
ginger,
red and green peppers,
scotch bonnet pepper,
carrots,
cabbage,
peas 
sweetcorn.


Seasoning used

salt,
curry powder,
dry thyme
 flavour enhancer.



Directions for making Potato, Prawn And Vegetable Stir Fry 

  I washed and parboiled the

new potatoes with some salt then leave in cold water to cool down.

After cooling down I peel the skin of the potatoes and set aside.
* in the hot extra virgin olive oil I fry chopped onion, chopped garlic and scotch bonnet pepper and grated ginger.

I then add the prawns.
* after 2 mins I add the cabbage and carrots as they are the toughest of the veggies.

3 mins later I add the peas, sweetcorn, red and green pepper.
* I then season with curry powder, dry thyme and flavour enhancer.
* I then add the new potatoes so it softens (it was only parboiled) alongside all the veggies.

Turn off the heat after 3 mins and serve.



PS: this meal can be ‘potato, prawn and vegetable casserole’ if finely chopped tin tomatoes is added to a casserole/oven dish with the lid on it with all the above uncooked ingredients and left to slow cook in the oven for about 30-40 mins on medium heat.

  1. Thanks. Nelly new potatoes are very small potatoes that don't need to be cut and can be eaten with d skin on and also good for making salad.
    E no follow o my sis just buy irish or any potatoes u find in the market. Just make sure you cut it down so it cooks tru properly as its perboiled and stir fried.

    2)Also,how do I cook fresh mushroom?I mean the one gotten at shoprite?I'm I supposed to parboil it or just add it straight to my efor?besides what type of soup can I add it to?..pls I'm sorry to ask all this questions o..but I really want to be a great cook before I finally walk down the aisle..tnk you as you respond.

  3. Add the chicken stock to your stew to give it a better taste and use chicken stock cubes.

    To add mushroom to efo wash it Properly and add it to the stew/sauce and let it cook for about 5-10mins before adding the efo to the stew.

    You can add mushroom to fried rice, steam it and eat with rice or boil with white rice, add it to and soup (egusi, okro, ogbono, vegetable….), yam porttage, all stir frys.

  5. 1.U can use mushrooms to cook edikaikong soup, throw in ur washed and hand shredded mushroom into d soup wen d soup is almost ready.
    2.I hear d dry ones sold in packs taste like shrimps wen used to make. coconut rice.
    3.U can also add it to d above recipe (tasted it in a chinese restaurant before).
    4. I have seen my mum use mushrooms to make light achi. "one point" soup wiv little ugu leave.
