Question And Answer On Kitchen Affairs.   Anonymous July9, 2013 at 3:06 PM
Aunty Eya please do a post on Question and Answer concerning kitchen affairs. There are a lot of questions about cooking I need to ask and I’m sure others too have. Thanks. Michgirl
Thank you Michgirl. I never thought of this. I think I should ask too cos I have my own question about sweet potatoes. Apart from frying, does anyone know another delicious method of preparing sweet potatoes please? They taste too sweet when I boil. These are very affordable in Abuja yet I

don’t buy cos I know just one method of cooking them which can be boring. Any other method? Please help me enjoy sweet potatoes.

  1. Instead of cutting the sweet potatoe vewy big,u can cut it vewy vewy tiny in form of chips before frying. that way it comesout vewy dry like plantain chips and crackers.
    With ketchup,u've a snack already.

  4. I came to this blog and found love, friendliness, peace and education.

But somehow some peeps who carry hate, envy, vile, bile and wickedness where they exist obviously found this blog and decided to share a piece of their cake and it's recipe and now some other ppl are now making that same cake.

I have never been surprised that things have changed here, can't speak for others but I know about my own life and it's up's and down… Life will always promise you a jolly ride, but end up dishing you a jagged one at some point. My surprise is that many of us don't understand this including Aunty Eya.

Let me share this about me…

Recently, I turned my life into an open book, no pretense, to tension, no hate! The 1st and only time i entered a police cell or even custody was during my NYSC posting in the remotest of villages in Ekiti State. Every fellow corper hated me, the even sold me out to the indigenes who's hate became viral. Someone asked me yesterday on BBM, what's ur most happiest day? And I replied the day I left Ekiti back for Lagos.

I got into cell from the hands of some1 who I welcomed, fed and even helped at many instances, she was hoping to be in a relationship with me, she was chubby and not my kinda girl so I started to create the distance (note I never was for 1ce intimate with her) then she realized and joined the #BenHateTeam of Moba/ekiti.

In short she took the job to her self to insult me everywhere and anywhere… The straw that broke the camels back was her insulting me while I was addressing newly posted corpers to the town. After which she emptied a big bowl of water used to rinse plate on me, then she dashed to the always empty police post opposite our lodge to lay a report that I slapped her… I was in cell for the 1st time in my life for good 16 hours until she decided to end the case. She apologized for puting me through all that stress and I smiled with her the next day

Why was I hated that much? I realized in the whole wretched town most of the corpers lived and behaved like indigenes. Many of this corpers were just angry at the fact that I could afford a lot of stuff without alawi, the way I dressed, carried my self and related, my gadgets and so on. Some of them have never been to lagos sef, so they began to see me as a threat and as if I was IBB's grand son, envy was rife!

My point is… hate will lead us no where! No matter how grieved we are we must learn to understand we are all humans. You delete my comment, you drag from LIB, SDK is the best blog, you cancel my food and so on won't make us happier.. Afterall, someday we'll lay down 6ft with no more chance to say I love you, I appreciate you irrespective… Isn't that the life of JESUS!

To Aunty Eya, my candid advice: no matter what anyone spew's, spams or tracks let this blog be an open book! The yoruba's will say "Ti aba gun iyan ni nu epo epa, eni ma yo ma yo" meaning: if we pound yam in groundnut shell whoever will be satisfied will be irrespective.

To Ahdaisy: at some point you've exhibited a whole lot of perseverence but no restraint. Looking past some peeps, issues and past will help a whole lot.

To all: whether you all leave today or tomrw to SDK, it wouldn't change anytin, some1 like me won't move an inch away from this Blog and I know we have 100's if not thousands of me here already.

    Nuff'Said
    Have a blissful day ya'll

  6. Hello, WC house. How is everyone doing?
Please I have a few questions.
    1) How do you know good ogbono just by looking at it?
By 'good' I mean the type that 'draws' very well.
    2) How do you know good yam just by looking at it?
By 'good' I mean the type that is good for pounded yam, the type that 'draws'.
    3) How do you know good watermelon just by looking or feeling its weight or hitting it?
By 'good' I mean the type that is ripe and possibly very sweet.
    Thank you.

  7. Oga Ace, thanks for the words of wisdom. One thing is certain, ppl rejoice when you do several good for the them but the moment you do one wrong whether directly or indirectly, they turn on you and forget all the good you did. No wahala. Aunty Eya, just keep doing you and even if the whole world turns against you, history will always favour you…

Now my question. How do you keep potatoes fresh for long?

  10. There re two types of Ogbonno, my paternal lingua calls them Ujuru and Adu. Ujuru is the one they eat the flesh while Adu(or Owe in Urhobo)'s flesh isn't eaten. Adu draws far more than Ujuru.
How to know is this: Pick an Ogbono seed and break it into two, rub both surfaces together and if it produces a draw sap then you got your original Ogbono.

Yam? Am not a pro coz there're different species of it. I always ask my customer but I prefer the dry looking yams coz they tend to be sweet when boiled.

in the North when we hit the watermelon and hear a "koi" kind of sound you know its good but if you hit it with your fingers and it sounds "dom" then its either too soft or already bad.
    My two pence

  13. For the watermelon! If its frm maiduguri where it hardly rains its usually sweeter, in short they have the sweetest water melon! When you pick it up its usually heavy, not like some that are light, then hit it if it makes a dum song its bad, if its a light sound its good.

  14. Ace I understood you but for the past few days this blog has been quiet and relatively peaceful. It's the same Eya that has started stirring controversies bringing up posts like the blog is too boring and also talking about the tracking issues. She obviously enjoys the 'hate' as you put it.
I believe people were just airing their opinions as to why the blog was becoming dry. I know it's easy for us to label any criticism as hate but if you think about it, the blog would have continued being 'peaceful' and 'hatefree' had Eya not started to bring up controversial topics. So before you talk about people hating on this blog, just relax and realize that Eya enjoys the hate because it increases traffic for her

Make sure u fry ur tomatoes well , in not frying make sure u boil it to dry to remove the sour taste, I also add tomato puree. Goodluck as u try

To store flour for long, put it in an airtight bag or container then put it in the freezer for some weeks so that any thing in it will die. Then you can bring it out and keep for as long as you want still in an airtight container.

  25. Though I haven't tried it, I saw a recipe where you shred your sweet potatoes to be as thin as chips, you brush them with little oil, then place them in a plate and put into your microwave oven. Don't remember the temperature it was set to. But, cook in your MW till it's brown; has a roasted look. You can experiment on it.

  27. In the spirit of sharing kitchen tips, here's another one. Have a seperate wash sponge or foam for your drinking glasses and cups. This will help you eliminate that 'fishy' or 'egg-like' smell most glass cups have. That smell puts me off wen i ask for a glass of water while visiting someone. When you use the same sponge for washing food off your plates to wash your drinking glasses and cups, then you will have that nauseating smell. Your visitors might not say anything, but they notice.

Generally, electricity 100%, good or near perfect one way roads, pipe borne water everywhere you look, but the ppl are wicked.

Wish you a lovely stay there as you obey the yeye clarion call!

This is the secret weapon Americans hold over the world!! Everything is not about money. Nigerians have got to also change this mind-set that someone owes them money. We should learn to develop pride in ourselves as a nation, that is the only way we can make a head way as a nation!!!! These back-bitings have got to stop!!!

Anyway to the original question on this post Eya google is your friend and YouTube your cooking teacher use them. You can make sweet potato pie or sweet potato pudding, sweet potato bread, roasted sweet potatoes basically anything you can do with tubers can be done with the sweet potato.

  36. I read your letter of appeal Ace.

I am not moved because these bloggers know what they are doing.

It is so unfortunate the readers are blinded by their loyalty to them and never see any wrong as members of a church see no wrong in their pastors.

I am not addicted to any blog. Read whatsoever catches my fancy and leave because i don't know these bloggers on one-one basis, only accept what they write which might be true or lie.

You do not know the true personality of anybody until you live with them or interact with them on daily basis. Nobody is without fault.

I have read the posts and comments here to know that this particular blogger enjoys the whole attention and drama.

Readers, read and take whatever information you want and leave, must you comment on every article?

    Thank you.

  38. Iru can be used for any fried stew: just add it to the sauce to cook.
It can be used in ogbono, okra, vegetable and egusi soup and it can be added half way through your cooking.
I put in yam porridge/pottage, plantain porridge, ofada stew, ayamase stew.

    Reply
  39. I add iru mostly to my vegetable soup and okro. If I have to add to ogbono then I smash it, so I don't see it. As for the timing I add when my meat is almost cooked.
I also add iru to my ordinary stew and it gives it a unique taste. I fry it with my onions and curry leaf before adding my fresh tomatoes.
Ofada stew for me can't be made without iru.
Lastly I add it in my local rice( palm oil rice) and banga rice.

  40. Thank you very much. And she's always using the sympathy cards. Her thick voltrons cannot see through it. And when you mention it they call you a hater.
It's one thing to like controversy and not care but it's another to crave for it and pretend as if you are the victim.
And that is my BIG problem with Eya. Over last week, the blog was quiet cos she made people believe that she doesn't like chaos and was also deleting comments.
Now after the blog became peaceful she started posting controversial topics, knowing very well that it would not bring peaceful comments. The most surprising thing is that this time round she is not deleting the hateful comments cos she wants to increase traffic. When you point out these things to her, you are labeled a hater. Of all her voltrons, it's only Deborah I respect, cos she was the only one that could question some of her moves and eventhough things were clarified later I will always respect Debora for that cos I know she is someone who does not blindly follow

  44. Let me add the lil kitchen tips I know.
    — Onions and salt don't go together, I mean in storage. Store ur onions far from where ur salt is, salt makes onions to decay as soon as it touches it. Also, if u can't use up a whole bulb of onion at a go, cut it with a V shape instead of circular. That way air will still be circulating on it and will make it last longer after cutting.
    — When cooking ogbono soup, if you want it to draw and thicken very well, don't cover the pot after you add the ogbono. Leave it open and allow to boil, you'll notice the difference. Also Onions doesn't make ogbono to draw very well, add sparingly, maybe only when you're steaming meat and even then, just little.
    — If you want your meat to be very soft, don't add water initially when you put it on fire. Just add all the ingredients to the beef, and place the pot on fire, allow the beef to produce its own water and leave to almost dry before adding water. That way you get tender meat.
    — In boiling cow leg, throw a piece of tom-tom sweet into the pot. I heard putting a nail also works, but for the hygiene issues. Tom-tom is a healthier, better, hygienic and cost effective alternative. Tom-tom also works with strong kpomo too.
    Ciao
